I recommend you read up on CSM/UFEI. CSM is a bridge that allows non-EFI compatible OSes to run on EFI systems.

first of all n00bs who want to install w7 (common case) are thrown off by most uefi hardware as CSM is hard to implement on most systems.
 
I swapped in a drive and that didn't boot either

but even big-box BIOS sucked when it existed.

look at the BIos on the pic you gave me. THat they try to make look like a operating system, not a BIOS setup. The mice never work right on those things. And that makes it harder to navigate with the keyboard
