As to universality, do you mean physics laws are looking less universal or linguistic laws (or is it language specific laws)?

Re grammaticality vs acceptability and grades of either, that's a linguistics 101 issue. Instead of relying on the questionable always-in-progress wikipedia, read in its entirety an intro linguistics text.
