I used TFS for 3 years, found it pretty good
 
there's a central server which is the 'source of truth'.
 
The only source-control thing I use and used is Github and Bitbucket
 
In order to alter a file you must first contact the server to check that file out
then you get a 'lock' on that file which can be exclusive (for some reason the ythought this was a good feature) or it's not exclusive - anyone can modify it
 
That sounded weird in my mind...

I'm sure it is a good solution to some people, but if you've ever had the freedom to use git, TFS leaves much to be desired.
git does pretty much everything better than TFS, the only thing git doesn't do is have a centrallised server, which I guess poses a security risk for some companies.

it does have a notion of origins, though
set up a server, have everyone point to the same origin, and bam, central server
 
No but the difference is with TFS you only have that one server and you can only push to that one server
with git you can just add another remote (github) and push to that with no one to stop you

No, I get that functionally, it's the same, but the idea that malicious employees could push to any given server might be a risk to companies - and why they prefer a TFS box over a git one because its so easy to push to a random server on git.
