Hey guys
Can you accidentally make yogurt from pastuerized milk
i have this quarter gallon or so i didnt drink while i was sick, it started to congeal, doesnt smell spoiled at all, and has a sour taste

I don't know. I don't think anything like that has been asked on the main site, so you can certainly ask there. This room tends to get active in about 5 hours.
Include how old the milk was, at what temperature it was held, whether it was sealed, and anything else you might think is relevant.

Q: Pasteurized milk that has gone sour

user24266I have 1/2 gallon of milk (not raw) that turned sour in fridge (not curdled). Hate to throw it away. Can I safely use it to make cottage cheese or put into a chocolate cake?

Weird and scientifically interesting that yours is congealed and doesn't smell spoiled, but don't confuse that with safe.

4:36 AM
yea
statistically its not in the favor of it being safe
often the safe version of what happened with me is the case with unpastuerized milk from a good supplier since they have an abundance of beneficial bacterias (the original culturers) in the milk. Pastuerized not so much

Q: Can soured raw milk be used to make yogurt?

FlimzyI have a large quantity of raw milk at my disposal, and am trying to find creative ways to use it. Various web sites (here, here, and many others) have suggested that raw milk, even (perhaps even especially) after it begins to sour, can be used to make yogurt. I've also heard the claim that sou...

4:51 AM
But @user507974's milk was pasteurized. I have been wanting to get into cheese-making, but finding raw milk here is really hard.

Yeah, I know. But if it's not safe with raw milk I can't imagine it being safe pasteurized, right?
Much less chance it's "good" bacteria, very easy for it to be "bad".

I don't know much about the subject beyond reading about making mozzarella. Raw milk is definitely preferred for that.

The best Dutch cheese is made from raw milk.
And hello.

Hi Cerby!

5:08 AM
Hi!
Wait, I already said hello.
stomps self

Only 1 head said hi
now 2 :)

Fair enough.
Ave!

Achooooo! Good morning!

Bless you!

Hey, new mod - I came across this answer: cooking.stackexchange.com/review/first-posts/39020. Now I'm wondering: is it just an attemot to generate klicks or a genuine attempt to answer? But it's missing the "reduce power bit", yet does give a suggestion. Your thoughts?
I thought about some heavy editing to remove "go look at my blog!!!" And keep the bare essentials.
(And I can do it w/o the heavy diamond ^_^)

I actually skipped that question in the review queue; it's definitely self-promotion.

Not when I'm done....

8:59 AM
And gone are the link and references to other answers.

Good!

Well, we non-diamonds have to keep reviewing, don't we? Can't have mod-hammers for every little thingy ^_^.
Have to run - daughter needs me.

CYA!

@Cerberus nothing as such, I just wanted to know how to have text expand without having to hit the space bar
@MafaldaHopkirk interesting non-sequitur there
@cindy hey sweet cheeks

1:32 PM
Hi @ElendilTheTall! Storm over yet?

glorious sunshine all day yesterday and today

You're joking, right?

Wow.

storm finished on Monday night for us

1:39 PM
Any romantic plans for Sunday?

nope
our romantic lives aren't dictated by manufactured holidays perpetuated by greedy multinational corporations

Or, plain text "I have two kids and a busy life and my wife can be glad she has me"?
(jk)

that too :)

You are such a hopeless romantic ;-)

the adjective is right at least

1:46 PM
Just scrapped my brunch idea - reviews of the restaurant were just too bad. Especially about the waitstaff.

So just probably a nice breakfast at home and a cup of coffee later.

I hate rude waiting staff
If you're so hot, why am I sat here and you're bringing me the food?

Yup. Spoils everything.
We're probably going to the Fernsehturm this weekend. Re-opened just a few days ago.
Fernsehturm Stuttgart (English: Stuttgart TV Tower) is a 216.61 m (710.7 ft) telecommunications tower in Stuttgart, Germany. It was the first telecommunications tower in the world constructed from reinforced concrete, and it is the prototype for many such towers world-wide. Although controversial at first, it quickly became a well known landmark of Stuttgart and a tourist attraction. == Location == The tower is located on the hill Hoher Bopser (elevation 483 meters) in the southern Stuttgart borough of Degerloch. From the observation decks there is a view of Stuttgart, from the forests an...

cool
Mr Stephie will some interesting photo ops
Does he have a circular polarising filter?

1:52 PM
The forecast says "probably not".
Not yet. Is that important?
<checks anazon shipping times>

depends on your definition of 'important'
but it's the only essential filter in my kit bag
with just about any other filter, you can replicate the effects digitally very easily
but a CPL - not a chance

Most important in sunny weather?

Great for water, great for foliage, great for skies, great for haze
every landscape photographer should have one

Darn.

no, weather is irrelevant
taken without a polariser (I don't have one for that lens)
see how the water is all glary?
nice dark, non-shiny water

1:59 PM
Ah. How do I find the "right" one? Preferably w/o asking hubby...?
I suppose I need the lens it should go onto?

do you know what lenses he has?
yes

Well, I can look...

on the end of each lens will be a number followed or preceded by ø
the diameter
get a Circular Polarising Filter at that diameter
does he have more than one lens?

Yup. Two 52's (kit and fixed), one big 77 one. (Sigma 700-200 for his birds and portraits.)
Any recommended brand or other features?

@Stephie what's on offer?
does he use his kit lens any more?
I assume that's an 18-55?

2:16 PM
The kit is the 18-55 that came with the body. Used occasionally. But if you have one with more light.... You know.

what's the prime?

Probably the big Sigma.

no
lol
what's the fixed lens?
what focal length
(a fixed focal length lens is called a prime lens)

Tsk - then ask in a way I can understand! ^_^
A 35mm Nikkor.
My job is saying "I like this photo better than that one"!

:)
well, I guess it doesn't matter anyway - get a 52mm one and it will fit both lenses
that 35mm is a little beauty, I used it exclusively for 2 years

2:28 PM
So the filter should go on the prime lens because that's the one for landscapes...?

yes, but it will fit on the 18-55 too of course

What should I keep in mind? Like amount of light that is blocked / passed. Any "reasonably good" manufacturers? There is an "amazon basics", but with suspicially low price and suspicially high ratio of sponsored reviews.

2:41 PM
@Stephie do you have a budget in mind?

Hm.... Under 100€? Under 50€ What makes sense? I hate "saving" when a few € more get disporportionally better results.
OTOH I'm not buying "labels" or "names" just to show off a logo.

Generally they are all much of a muchness in terms of allowing/blocking light. The main thing you have to watch out for is a colour cast - cheaper filters can make shots look a bit blue.
though of course with post processing that's relatively easily mitigated
Amazon doesn't have much choice by the looks of it

ok, so better have hubby do the research himself?

never!
hmmm, Lee filters are 250 euros

Ouch...

2:50 PM
ah! here you go. Marumi are very respectable: amazon.de/Marumi-Super-Circular-Polarising-Filter/dp/B001AL1QGA/…

But Lee makes these "goes on top" filter systems? So using the sun protection thingy is out...
@ElendilTheTall and would be in time.... Hang on, I need to place an order ^_^
Done!

I'm great at spending other people's money :D
now if I could just get them to spend it on me...

So now all we need is a quick prayer to the weather gods to save us from a storm on Sunday - this needs testing! (Ponders extra large coffee while hubby shoots a gazillion of photos.)

for the TV tower, it will come in handy in a) reducing haze in the distance and b) eliminating reflections shooting through glass
you can also use it as a makeshift neutral density filter to slow the shutter speed down for effects like this: flickr.com/photos/cintramontane/24225731100/in/…

I'll report back on Monday!

2:57 PM
(that was done using exactly that method)

Neutral density? (I understand the words but not the technical meaning)

basically a dark piece of glass
limits the light coming into the camera so you can slow the shutter speed down
resulting in moving things being blurry
a CPL reduces the light by between 0.5 to 1.5 stops, so acts like a relatively 'light' ND filter

Ah. Allow longer shutter speed for those mire light sensitive cameras. Got it.

yes, basically.

(I'm not stupid, but technical terms in foreign languages baffle me. A combo of "translate" and "wikipedia" usually gets me on the right track.)

3:01 PM
and so you are forearmed, you screw the filter on, then the filter rotates to vary the strength of the effect

And - a number of new words for my ongoing list.
(Completely without Gaelic weather terms.)

with skies, the effect is strongest at 90° to the sun, so on the wide angle lens you have to be careful, or you will get a transition of the effect from one side of the shot to the other

Thanks a lot, @ElendilTheTall!

I aim to please
hope he likes it

So now I have to confess to hubby that I have been discussing his hobby with a stranger over the Internet... Like when I pass on the advice above.
(Just kidding - of course he knows!)

3:04 PM
I assumed you'd just act like it was obvious
:D
"Jesus man, don't use such a wide angle when it's sunny! Obviously you will get a transition effect in the sky" <smack on back of head>

He knows I'm good with physics, but tot that good!

one interesting effect is that you can make LCD screens totally black
It's also good for seeing through windows because it eliminates reflections in anything non-metallic
erm... so I'm told
¬_¬

And never had a chance to test it. Soooooo saaaaaad....

@Stephie this, a polariser, and a view of a high-rise apartment block would be very interesting! lensesforhire.co.uk/product/nikon-af-s-800mm-f5.6-e-fl-ed-vr

And if done right, the rent would pay itself....
@ElendilTheTall, ever deamt of going on a photo safari? Or are you sticking to motifs closer to home?

3:18 PM
@Stephie I'd go if I won it in a competition or a rich and attractive German woman bought it for me
but I'm not itching to go on one, no

@ElendilTheTall Hey sugar!
Hi @Stephie!

how you doing?

@ElendilTheTall Hanging in. How about you?

all the better for seeing you, of course

@ElendilTheTall Quite the charmer, you are. ;)

3:23 PM
thank you, Yoda

Anytime!

@Cindy, I asked for @ElendilTheTall's expertise - helped me and his ego. Win-win situation.

Ego? I don't know what you're talking about ( ̄ ̄メ)

@Stephie Lol! Can't go wrong with win-win.

@stephie In any case, you didn't ask, I just waded in :D

3:31 PM
@ElendilTheTall well, that's the female way. Mention the right subject and your counterpart can't resist chiming in.

yes
duplicitous bunch aren'tcha

It's on the second X-chromosome.

I feel so used
and not in a good way

<pats @ElendilTheTall's head> Awwww, we love you!

<sniff>
good job I'm sitting down, short stuff, or you'd be patting something else ;)
ᕕ( ᐛ )ᕗ

3:53 PM
I'm not "short", I'm "concentrated".

:D
100% Concentrated Stephie
Guaranteed pureahahahahahah
;)

so, that went less smoothly than planned
I went over to the new department, hoping that I can meet Mr. Decisionmaker in person

What happened, @rumtscho?

his door was closed, the next one was open - the department secretary's. I left it with her.

So...?

4:00 PM
She was surprised, her first reaction was "do I have to send a copy to HR now?"
I asked my boss, and she was very concerned, saying that all applications have to go to HR, never directly to the department

Erm, standard procedure, no?

so I used HR's online tool to upload an electronic version and wrote the secretary to expect my application a second time :(
@Stephie not that I was aware of.
For the job before last, HR wasn't involved before there was a contract to be signed
for the current job, I don't think I ever knew that HR was involved. I used the online form then, but I got a reply from the future boss.
well, I hope that this doesn't make too negative an impression
and in case HR is collecting all applications to send them as a bundle after the application deadline is over, the department already has a hardcopy of mine to idly leaf through before it has even seen the others :)

don't sweat it, it's not your fault they're incompetent

> To apply for a position please use our online application portal (www.dkfz.de/jobs).

@Stephie wer liest ist klar im Vorteil

4:06 PM
HR has to be involved, but I don't think it's a biggie that you handed in another (paper) version.

Well, I am the kind of person who overlooks details. If they can't live with a little bit of goofiness, I'm not a fit anyway.

Well, I have seen enough cases where all details were fixed between applicant and new boss, but still there had to be a formal "Stellenausschreibung" and a complete apllication sent to HR.
No big deal.

anyway, now that HR knows of it, I am also certain that they will learn about the policy of "you have to invite all internal candidates". I was a bit worried that they might not know it, since they have not hired people at our institution before.
so, the ball is in their court in that matter, I can concentrate back on the dissertation.

See? All's well.

I knew it's well, I'm just grumpy that I did it wrong when I should have known how to do it right (because it was written under the job advertisement).

4:15 PM
@ElendilTheTall, are the flickr photos all yours?

@Stephie natürlich

Just saw the nuthatch.

all photos on flickr are Elendil's? A true Stachanow's work.

@rumtscho you're a comedian now?
;)

@ElendilTheTall I would never dream of taking your place.

4:20 PM
you charming thing you <blushes>

haha, you've posted pictures here before, but this is the first time I see the bird ones, including the bird's ass shot

yeah, quite new those ones
:D

The cat is just perfect
you know I'm a sucker for highly detailed texture. And it has a kitty, too :)

163 people disagree with you :D
you'll like the next one, Mt. Pachyderm

without the name, I wouldn't have recognized what it is

4:23 PM
:) that's what I was going for

Been to the zoo, eh?

and the bussard is a whole Disney movie in itself

bussard?
ah, the kite

the one with the strange bokeh in the trees

@Stephie not at all, just the local wildlife ;)
@rumtscho vulture
I have a sharper photo of that vulture in the next shot in the burst, but he's right on the edge of the frame
verdammt!

4:26 PM
OK, I didn't know that there is a difference between a buzzard and a vulture

What kind of kite is it?

a Yellow Legged Kite
@rumtscho apples and oranges :)

the ropes are beautiful too. I can't even say why I find them attractive, but they caught my eye immediately.

me too
just a nice variation in colour and texture
evidently you have an impeccable eye rumi ;)

Did you send the Sentinel to that magazine?

4:31 PM
No

I could interpret this in such a wrong way...

and speaking of bokeh, the one on the Fat Chaffinch is really intriguing

sun dappled leaves

even though the high luma grain somehow doesn't "fit".

yeah, it could do with a bit of reprocessing

4:33 PM
hehe, the next one looks like anime came alive

cute isn't he?
kawaii!

cute and unreal at the same time

but not as cute as the next one
so fwuffy
then the next one is badass
'get my good side bruh'

4 hours later…
8:44 PM
Catija- I just moved from Austin a few months ago.

@Sobachatina Oh! Where to?

What kind of film do you work on? I have a friend that is considered the expert on blood for movies in Austin.
@Catija A little tiny town in Utah. Oddly enough, I found a job that pays better.

@Sobachatina Well, I don't work in it much any more. When I did, I worked in casting, so we'd cast anything. TV, films, commercials, etc.

That makes sense.
I lived up in Liberty Hill so I was already out in the country when I was there.
The snow is taking some getting used to though.

@Sobachatina huh. Well, as long as you're enjoying it. I don't think I could live a small town life but I respect it. What industry are you in?

8:46 PM
Software.

Well, I guess that's pretty par for the course on SE. :D

Even though the town I am in is small I'm still closer to big cities now than I was to Austin so I actually have more going on now. It's kind of weird.
@Catija Yes. It does seem unoriginal.

I don't do software but my husband does, so that's how I discovered SE... but I only participate in sites that are non-software related.

Makes sense.

@Sobachatina Oh, well, that's good. I could do that. I wouldn't want to live far away from everything but living on the outskirts is fine.

8:49 PM
There are a lot of things I miss from Texas but it was time to mix things up.

Yeah, it certainly sounds like you managed that! Completely different location and climate and everything. Are you from Texas originally or just in Austin for work?

Just in Austin for work but I was there over 10 years.
It feels more like home than this does at the moment.
Have you done any chocolate tempering?

Ah. Yeah. I've traveled around a lot. Texas, Washington State, Washington DC, England... But Texas is home, though I'm from San Antonio originally.

I've been instructed not to spend any money for Valentines day as we already did a big thing for this year- but that is always a landmine.

Nope. We made a ton of truffles once but we used that fancy chocolate stuff that you don't have to temper to make it shiny when it hardens.

8:53 PM
I have a big chunk of bulk dark chocolate that I'm excited to experiment with. I know the science behind tempering but I've never actually done it yet.

I've heard that a giant slab of marble is useful :D

I want to try making truffles with it.
Knowing her, coconut would be the best.
@Catija lol. I may have to make do without that this time.

I think it's easier than some make it seem... particularly if you do it wrong, you can do it again... so you have some room for trial and error.

As long as I keep water out of it. :)

YES! That's the number 1 worry... so no sweating.

8:57 PM
I'm thinking of making a truffle that's like an almond joy- and dipping some strawberries while I'm at it.

Do you have something that can heat really gently to hold the chocolate at the right temperature?

Not really. We lost our heating pad in the move so AB's method is out.
Though- perhaps I should just replace it.
That would be safer than the double boiler.

That could be fun :D We usually do a chocolate dip... we buy a bunch of dark chocolate chunks from Central Market and melt it over a double boiler and dip in strawberries and nuts and chunks of angel food cake.
Oh, look, it's an Austin celebration. :D We all have a shared history.

<sneaks out>

9:00 PM
I'm appalled by the price of brisket and cilantro here!

I don't have much counter space next to the stove and I was worried that even on low it'd heat the water too much, so the one time I tried it, I ended up basically with an unheated double boiler that I kept manually adding hot water to...

On the other hand, my neighbor gave me about 10 gallons of apples off their tree this fall. There are tradeoffs.
@Jefromi Did it work?
The "adding water" part is terrifying.

@Sobachatina Yeah, it worked, it was just a huge pain.
Oh, yeah, I moved the chocolate well aside before adding water to the bottom part.
I also had help, so the adjusting temperature didn't take as big a fraction of the time as it would've if I'd been by myself.

This conversation has convinced me to go buy a new heating pad and try AB's method first.
Then the pad can also be a gift to my perpetually-frozen wife. :)

There might be a less painful way than what I ended up with though!
But yeah, heating pad sounds a lot nicer.

9:07 PM
In other news- I'm having a minor culinary-faith crisis.
Everything I've ever read about canning talks about the horrifying effects of botulism.
Much of the instructions are about how to prevent it.
But recently, reading papers, I've read that the toxin denatures and the bacteria dies at relatively low temperatures.
So... I know the results of the poisoning can be fatal but isn't it trivially easy to avoid even if the food is contaminated?

@Sobachatina I thought you needed high temperatures to kill the spores?

You do, but the spores aren't harmful except in infants.
It's the toxins produced by the bacteria after the spores hatch.

Ah, replied before the second thing.
So yeah, if I understand right, if you're willing to cook everything right before eating it, it's probably okay?

I don't know. It seems contradictory in places.

But if it's full of spores, then you can't leave it alone long after that or it'll be dangerous again?

9:11 PM
That's getting kind of hypothetical because you would probably unseal it to heat it up and it is only a danger when sealed.

Not sure about that - it's anaerobic underneath the surface.

That's another good question.

Um... sorry to interrupt but... what do we do with non-English answers? Flag as NAA?

I suppose the advice is all about avoiding the risk altogether by handling it correctly and cooking it when opening.
@Catija "Gossip is known by different names in different Italian regions "

@Catija save them if possible otherwise NAA

9:14 PM
I don't think Google Translate got that exactly right.

That whole list probably wouldn't get translated, though, it's all names of cookies and regions, right? Not sure how useful it is without knowing if they're actually all the same thing though...

Yeah, I don't speak enough Italian to recognize what the answer is even saying.

I'm fairly confident it's saying they're known by different names (and "gossip" is the only real issue with google's translation).
Wait, is it plagiarized?
Yep, looks like identical content.

ummmm okay now I'm just writing an answer for him, oh well

9:21 PM
Angel wings are a traditional sweet crisp pastry made out of dough that has been shaped into thin twisted ribbons, deep-fried and sprinkled with powdered sugar. Traditionally present in several European cuisines, angel wings are known by many other names and have been incorporated into other regional cuisines (such as the United States) by immigrant populations. They are most commonly eaten in the period just before Lent, often during Carnival and on Fat Thursday, the last Thursday before Lent – not to be confused with "Fat Tuesday" (Mardi Gras), the day before the start of Lent (Ash Wednesday...
One of the alternate names is "crostoli"... which is similar to the guess the question asker states.

Yeah, it's in the Italian too.

Nice of you giving that new user such a pretty answer. :)

cucina.grandinetti.org/recipes/cookies/… This site seems to imply that they have the same name, even with the honey.

@Catija by all means write another answer! I'm not planning on writing an entire answer for that new user.
An in-depth one, anyways.
I wonder how much variation there is - having that many different names sure makes it seem like they might not all be exactly the same thing.

I don't really know much about it, really... I mostly just did a quick search for "crostoli with honey" and got a couple of sites. That doesn't mean that there aren't better names for it.

9:38 PM
Fair enough.
Also protip, there was a [2] in that answer.
Along with it being strangely comprehensive, big sign of plagiarism.

@ElendilTheTall Ah, I see. I'm glad you found that out. You probably found it in the Help article on Hotstrings?
You probably already know the Help file is very good.
I've never seen such a good Help file.
Although the latest additions (probably by Lexikos) are somewhat less clear than the original AHK's (by Chris).

I get why they picked it but "hotstrings" is a kind of awkward name choice, google-wise.

9:53 PM
@Sobachatina Hey, how are you?
You've moved? That's exciting. How's the new place?
Did you leave your great workplace, or does it have another branch where you live now?
