When you take it out, it's all wet
then stuff falls on the floor
then you have to dry, and some stuff shrinks while other stuff isn't dry

Or, well, it can if the errors on the data point vary. If you don't have the same error on all data points, you need to do a proper propagation of uncertainties, which for the average just means taking the average of the uncertainties

@JannikPitt There is two different kinds of errors on the average - one from the statistical standard deviation from averaging, which can indeed get arbitrarily small, and the systematic error from the imprecision of your measurement which doesn't really get smaller by averaging.

My lab course too had a weird hang-up where the first parts had to be completed by drawing graphs without a computer
