The other is a process that changes the flavour of a quark in a nucleon, which changes a proton to a neutron or the other way around, which makes an intermediate particle called a $W^-$ or $W^+$, the sign being related to the sign of the beta decay, which then results in an electron and electron neutrino or an anti-electron and an anti-electron neutrino

When you have radiation, the photons can be seen to come in to fill the 'energy gap' that would otherwise be there if they weren't made
