It's mostly just that it's such a parallelized task
CPU's are faster, but due to the way mining works, it makes more sense to do something slowly a thousand times all at once than to do it quickly 8 times at once
GPUs can do more complex things to massive amounts of data in parallel but at a slower clockspeed.
A CPU can do z=x+y in one clock cycle, a GPU can do Z=X+Y where Z, Y and X are large arrays of data in a single clock cycle. A CPU would need to iterate.
GPUs are built this way (and have historically been used pretty much only for graphics) because a lot of graphics processing can be massively sped up with this approach.
Graphics engines will take a bunch of stuff in 2D or 3D space and make it into a program that goes from (x,y) => (R,G,B), and run that program on the GPU to calculate the RGB value of each pixel on the screen all at once, rather than pixel by pixel.
So that's 4-6 trillion shader operations per second, unless I've misplaced an order of magnitude somewhere.
@Moacir basically, tl;dr, most cryptocurrencies lend themselves well to doing the same operations on lots of different (small) pieces of data all at once, which is something that GPUs excel at.
If we make the (definitely false but probably correct to within an OOM) simplifying assumption that one CPU core-cycle and one GPU shader-cycle are equivalent for the purposes of crypto computation, and give the CPU the benefit of the doubt and assume that there's no resource contention between hardware threads
