Added bonus if the room layout is tile-able. An L shape where the doorways are at the ends of the hall is trivial, hence uninteresting.
The best I've come up with so far is to tessellate plus signs. There would be two different varieties: one where the doorways are at the ends, and the other has doorways on the walls to match up with the doorways of the former kind.

One almost-solution that I came up with early on was one where there was a single room with four doors: two at the ends and two on walls, but it had an infinite line of sight that intersected an interior corner, so if the doorways had non-zero width, there would be an infinite line of sight.

Not necessarily, since a "line" of sight among three doors may bend in the middle.
 
The idea is to avoid the need to use fog or cut-off methods in raytracing.

Okay, again, this is meant for FPS-style gameplay. There are some number of distinct rooms (this number may be 1). Doorways allow a player (and projectiles, vision, etc) to pass from one room to another. These rooms need not be adjacent. In the interest of avoiding infinite render distance, there must be no single, straight, uninterrupted, infinite line of sight. The idea is to have a weird open-and-closed world. Open since there are no hard boundaries, closed since the playing area is finite.

My ultimate vision is to have a 3D spaceship FPS game where the environment is filled with obstacles formed by 3D simplex noise (somewhat like Minecraft's Extreme Hills M biomes), and the faces of the cubical playing space are linked to each other such that vision and objects pass seamlessly from one side to another.

Consider using 2D simplex/Perlin noise to create a heightmap, with which you can mold a landscape. Now add water at a certain level. You can't see what's under the water. Okay, now, do 3D simplex noise, and add "water" at a certain level. If this "water" is actually some sort of viewport culling, then you will end up with holes and voids in space. Which sounds like it'd be a ton of fun to fly around in.

Yeah. I'm pretty sure they're only as cheap as they are here because CenturyLink is actually pretty competitive (they're starting to roll out gig), and USInternet has gig fiber in places, too.
