Tried a variation on this youtube.com/watch?v=7gBiapVNXSM
Used pomelo (happened to have one) and I think we used a little too much sugar but its interesting
Really nice smell - really easy (dump peel and sugar, strain out the peel)
Kinda smooth, almost like there's pectin in mine (I think whoever sliced the pomelo left the pith in ._.)

And here I am, putting out a “Closet Clearance” challenge for January.
Basically, see what you can make while taking full advantage of what’s already in your cupboard, cellar, freezer, etc. and use up what you have instead of buying new groceries.
(This does not include perishable foods like fresh milk or vegetables!)
In other words, can you build your menus around that bag of beans in the pantry or the bag of mystery meat in your freezer? What about the more exotic spices? The pantry staples where you went just a bit overboard when they were on sale a while ago and that now clog up your shelves?
I certainly will try to do that for the next weeks, which should have a few benefits:
- saves money (I’m sure we’re not the only ones who’s bank account suffered a double blow thanks to Christmas and the yearly payments for insurances etc. in January) and reduces food waste
- clears out closet / freezer space (which makes spring cleaning soooo much easier)
- encourages to break free from same-old-same-old food rut and look up ideas to actually use what is available
