spray oil definitely works well - even reinhart recommends it

Have been meaning to buy a mister, but keep forgetting
 
plus, rice flour is suppose to work wonders. I just found some and will be trying it tonight

rice flour is just ground up rice essentially
it doesn't absorb water as easily
you can make rice flour if you have a food processor (but you don't)
 
if it is ground finely enough, it should absorb easier than wheat
 
shrug
 
but it is probably ground like semolina
which makes sense if you want it to be slow in absorbing

@Mien a spray is under pressure, a mister is a pump with a screen before it so the ray gets split into droplets
Your deo is a spray, your window cleaning fluid comes in a mister
(I suppose that they come in these forms in Belgium too)

When it's really really hot.
 
If I am very hot, I splash my face with water.
 
And it's really a very fine mist of water.
 
So yes, if they spray they face with water under pressure

Oh, I've got another cooking question, it was relevant earlier.
Sometimes, working a difficult dough, you add flour to make it easier to work with.
I do that too, but sometimes I'm afraid that too much flour will change the dough.
Is this fear irrational?
Or should I ask it on the site? :)

rumtschoI like the taste of beef bourgignonne and would like to create a vegetarian version of it. For that, I plan to use oven-dried, tempura-fried aubergine slices instead of meat (egg-containing tempura, fried to a golden crust), and mushroom stock for the sauce. The problem is that I am not sure ho...

I think this is a slightly different question - it is still about a substitution, but the answer isn't "use tofu/ mushrooms/ whatever umami base you can find"
