Hello! Let's see now:

If steering wheel gives association with car, what association gives us rudder? Can it be ship or vessel somehow? I am not sure what to use for for ship. Rudder or helm? But then helm is something knights wore to protect their head or skateboarders wear for safety.

How it would be grammatically correct? "Keep your hands on the helm" or "Keep your hands on the ship's helm?"

@Boris_yo "Keep your hands on the wheel" could apply to a ship as well as a car. If you specifically want a ship, I'd suggest "Keep a firm hand on the tiller."
@KitZ.Fox Hmmm tiller does not sound nice for quote...
It's a common English expression.
