Being caught off-guard, I reacted badly to it, and in turn he gave me a one-day suspension, which I don't feel is fair...

The joke isn't, and wasn't, inappropriate at all.
It is, in fact, simple truth.
Only recourse is to apologize for reacting badly and ask to be allowed back in. Though 1-day isn't too much anyway.
