@ComFreek Shouldn't be too complicated. You need two versions of the listing and place them on different OCGs, and setting options appropriately (printocg=always|never, viewocg=always|never). But be aware that it might be acknowledged only by a few viewers (Acrobat Reader, Chrome PDF plugin)
 
might it be the case that the listing gets shown twice then by unsupported viewers?
 
@ComFreek No, this is very unlikely. All viewers respect the initial setting (on|off) I'd set the initial visibility of the print version to off, the coloured to on.
And put the first version in a zero width mbox, such that the second is located at the same place on the page.
 
Do you perhaps have a MWE? Say not with minted, but just two different text lines

@ComFreek you can't (directly) use verbatim enviornments like minted in another definition the minted/fancyverb docs show how to define environments that wrap the verbatim content
