It's just too JKR-ish. Every new film introduces new Force-capabilities, just in time for its grand finale.
Just like every new spell/magic item in Harry Potter.
The original trilogy was pretty consistent, overal, with the exception of Leia being Luke's sister, which they only thought of halfway through.

@AncientSwordRage The prequel trilogy had a lot of unnecessary problems IMO. Starting from a six-planet universe, a ridiculous premise for a war, worse tactics, and Hayden Christensen...
@DavidW at least some of those can be overlooked IMO
