I fiiiinally got on the sourdough train too, first loaf of bread is hopefully tomorrow so we'll see, but the starter has been very very happy the entire time growing it
I dunno if south bay actually counts as SF Bay Area for purposes of microbes, seems like a pretty different climate from SF proper
but it smells real promising so I'm pretty optimistic, whether or not it's actual SF sourdough

You know @Cascabel, when I lived in the east bay (many years ago now) I never once even saw sourdough! The east bay at the time was nothing but chain restaurants from what I could find. I'm sure if I'd lived there for longer than 6 months I would have found the artisan places.
One fond memory I have is the artichokes! Enormous artichokes, dirt cheap and the best I've ever tasted!
I gorged on those. There was also a brand of pickled jalapeños I loved, and can't find outside California.
@Stephie, mother of yeast? Sourdough starter!

@GdD Yeast is insanely hard to come by these days.
@Cascabel Speaking of SF sourdough, I lighted upon this today
https://sf.eater.com/2020/4/7/21212416/sourdough-bread-recipe-san-francisco-starter-tree
People reportedly are hanging sourdough starter on trees in SF. Wonder if it is really happening or am I too late to the party

So I'm making sourdough with the starter I just got @Stephie, and it's going very slowly. Proofing in baskets and baguette trays now, very little action.

I fed it with a 50/50 mix of wholemeal and strong white. That may have been a mistake, maybe I should have used white only
17:31
@GdD the big bread company that sells in a bunch of farmers' markets and small grocery stores around the whole bay now was actually founded in East Bay! a lot of things that SF claims are from there :/

@GdD yep, just low hydration.
My sourdoughs have names. Yours?

@Stephie, it's a 65% hydration dough, so should be active. It all came out well though.
Nah, I was talking about Livi. That’s one part water and two parts each of flour and old starter.

Ah, hello Livi
I haven't named my starter...I'll let my kids do that I think
My daughter loves naming things

Cute! So does mine. Sometimes with - ummm - unexpected side effects.
Last year she got to name a whole nest of chicks. I -gently reminded her that she can’t know which would turn out to be a boy or girl. She settled on names that were either unisex or could be easily „adjusted“. (With sheer dumb luck and against all odds all were/are female.)
But independent of the gender dilemma, one is „Google“ and why she thought „Falchion“ would be a good name for a hen beats me. Ok, she’s silvery grey, but still? A weapon?
@Ash I can safely say that all’s well. She’s very much alive.
