Yes, I tried to uninstall it via Control Panel. In the event log I get several of the following error with the event ID 5586: Unknown SQL exception '11001'. A network-related or instance-specific error occurred while establishing a connection to SQL Server. The server was not found or was not accessible. Verify that the instance name is correct and that SQL Server is configured to allow remote connections. (provider: TCP Provider, error: 0 - No such host is known.)

What about the uninstallation wizard itself, Is it stuck to complete? or what happened?

The wizard ends after around 5 minutes with the message, that at least one Office component was not successfully removed. The mentioned log file contains hundreds of INF entries and only one ERR: A network-related or instance-specific error occurred while establishing a connection to SQL Server. The server was not found or was not accessible. Verify that the instance name is correct and that SQL Server is configured to allow remote connections. (provider: TCP Provider, error: 0 - No such host is known.) That's why I asked for some workaround to uninstall SharePoint without SQL connection.

Is it removed now from the control panel or it still listed in programs!

No, it is not removed. SharePoint is still installed on the machine. It is still visible in Control Panel and Windows Start menu.

I'm here and working on your last suggestion. I tried so far to ping the SQL Server from SharePoint without several timout messages

Neither the IP nor the FQDN worked for me while pinging.

I fear that some changes regarding the firewall where done what causes the connection issues.

It seems that the uninstall process of SharePoint 2019 must have a connection to the SQL Server so it might be easier to re-deploy a clean VM and challenge my network colleagues.

I updated my answer with some articles to check connectivity so, If you can check the network issue with the network admin it would be easier than building a new VM

I'll take a look. But, as a conclusion: Uninstalling SharePoint does only work when the connection to the SQL Server still exists. Without it, it is not feasible to remove it.
