update
I've tried a few things to do what I want, and unfortunately there's no easy way to do it without breaking mobile responsiveness
so we might just not be able to do it
what I would probably end up doing is having the UI completely restructure itself based on the detected page width
i.e. once the width is at the point where the UI becomes a stack, it completely disables the resizing functionality and works like it does now
