the first Stormlight Archives book is on my shelf, but I wanted to read the original Mistborn trilogy, Warbreaker and Elantris first
Now I've read almost all of the Cosmere books besides for Mistborn and Elantris (and the bits of Arcanum Unbounded that are connected to those)

I'd recommending reading them after a novel, not as you go along, and they might still contain very minor spoilers for the next one in the respective series, but I've always found that worth all the cool behind-the-scenes info that you'd miss completely otherwise
