3:34 AM
night =)
I was looking around to see if my question would fit the SE, but I'm not sure...
It's a question about "when should I choose Rosemary over Thyme" it's more like "what herbs goes well with what" ... maybe some reformulation to fit the site... any ideas? Or there is no way to it to be On-Topic?

3:46 AM
hi Michel...
Can you make it more specific? Like hmmm...
@Michel
It looks like I just missed you.
If you come back, I'm happy to discuss it.
In 4 hours, we're likely to have another user that can help too.
@Michel, if you type @Jolenealska, that will "ping" me. If I'm awake, I'll hear it. I always have this window open if I'm awake.

4:08 AM
@Jolenealaska I'm just around here =)

Yay! I'm just in the middle of posting an answer on Main, but I'll beBRB.

ok =)

Back!

Welcome back =)

Ok, are you specifically wanting to know about rosemary and thyme?

4:16 AM
I'm wondering about the usage of herbs

or herbs in general?

Yeap
Herbs in general

Have you searched for herbs with the search engine?

Yeap, but I only found recipes =(

the search engine here? On Seasoned Advice?

4:18 AM
Google =X
here I looked for comparisons

Q: Is there a secret to flavouring with herbs

itjI am a strictly amateur cook. Most of my output is OK, certainly edible, but I seem to lack the ability to impart flavour through herbs. I can throw in an inordinate amount, but still no flavour (not even an overpowering one). Yet, I have a simple recipe for a vegetable stew in which the liste...

Q: Adding fresh herbs in no-knead Bread

zacharyI am experimenting with the no Knead bread recipe and want to add herbs to the recipe. I have added fresh rosemary (great) and fresh oregano (not so) to the recipe. What other herbs would you suggest?

Nice!
The first one I'm reading right now, looks like it is what I'm looking for

So, in that second question, he is asking a "real word" thing. You can do it that way anytime you're actually considering something.

*Not used to english-cook-language nor SA style of questions
So, sorry for being such a noob
hehehe

We can help with English cook too!

Q: Translating cooking terms between US / UK / AU / CA / NZ

JoeThis post is an attempt to keep track of the terms that differ between dialects of English or exist in some dialects but not others: British / Australian / Canadian / American / etc. Please note that Canada may be difficult to classify, as some regions (especially near the southern border) use U...

Portuguese here =X
hehehe
Brazilian (portuguese is the language)

Plus, if you catch me, rumtscho or ElindiltheTall we can usually help.

I'm love to cook, and finally I have my own place (my rules on the kitchen). So I'm starting to "try" new stuffs
And trying to learn more about food (not only rice, pasta, beans, meat and chicken)
:P

We have a few native speakers of Spanish, not sure about Portuguese. I speak a bit of Spanish, so I might be able to muddle through some language barriers.
1st new kitchen is sooo fun!! You get to put stuff away where YOU want it to go!! :)
You've come to the right site.
We love to help new cooks! :)

4:30 AM
I have being around for quite a while. But nowadays I'm getting more gusebumbs thanks to masterchef (USA, Australia and Brazil)
Also, some Gordon Ramsay series (F word, nightmare's kitchen and hell's kitchen) and some of Anthony Bourdain too (but it's more traveling than cooking :( )

HA! Have you read my profile?
My favorite cooking show is "Chopped", but I understand it's hard to find outside the US.

I'll look for it
thanks for the advise =)
Going to take a nape =)
Thanks for everything =D
see you around :3

Have you visited ELL? (EnglishLanguageLearners)? I'm there a lot too. Good night!

Only the "ELU"
Sleep time ^.^
nite nite ^_^
kisses and hugs, see you around xD

Well aren't you sweet Goodnight.

2 hours later…
7:09 AM
Gusebumbs - word of the week!

Hi Tall!
@ElendilTheTall Are you at work already?

7:56 AM
@Jolenealaska the wonders of mobile internet, sugar

Oh...I've heard that's possible...wow
Check out the Turkish Delight question...

I have
have you really never seen it?
it's actually a universally available 'candy' bar here

Is Turkish Delight a real thing in the UK?

this is a slab of TD coated in cadbury's chocolate
yeah
and you can get the real thing in supermarkets fairly easily
especially at christmas for some reason
the rose ones are foul, the lemon ones are ok

But would you actually see it, like in the impulse rack of the grocery store check-out lane?

8:01 AM
perhaps not there, but in a corner shop? sure
or on the individual sweets end aisle thing

I've never actually seen it, at least ever knowing what it was.

they've stopped putting chocolate bars at the checkouts now

When reading The Chronicles, I assumed something like a praline.
We have aisles labeled "family friendly"

waaaay off

I am really having a hard time typing today.
It's bad.

8:04 AM
I'll forgive you
thousands wouldn't

:)
I may just give up trying to edit typos...sometimes you just have to say, "screw it".

go for it
I am an excellent poofreader

I originally said what I actually thought, but, ah, I'll save my F bombs for when they really matter.

very ladylike

I'm doing a kitchen experiment tonight. Imagine that!

8:09 AM
do tell

Remember me saying that I have decided that I love to make risotto?

yeeeeees

The bad thing about risotto (not remaking into something different, as we've discussed), is the very narrow window of awesomeness.
20 minutes after perfect, it's not perfect anymore.

what kind of pan do you use?

A big skillet usually, but sometimes a small saute pan, i've also used a saucepan.

8:12 AM
saucepan is the way to go
the liquid evaporates too quickly out of a low-sided pan

I'll do that this time, I haven't in a while.
But anyway, I'm really thinking more of leftovers.

my other tip would be, when it's done, take it off the heat, stir in the cheese, then put the lid on for two minutes
for some reason it makes it extra creamy
anyway, carry on - leftovers

S@B again...even in my big skillet with no lid, I use a smaller lid just to cover the rice.
So I've written many answers on main that say "Don't refrigerate rice!" "Freeze it!"
so...

what's wrong with refrigerating it?

What about freezing risotto right when it is perfect...just before it's percect
EEK!
It dries it out!!
YUCK!!in a matter of hours!
Great for fried rice, but other than that eek!

8:18 AM
If you don't cover it well, sure
just like anything else
put it in a tupperware and it's fine

Even if you do cover it!

what kind of weird-ass fridge do you have?

Make a batch. Let it cool. Put half in one tupperware (or Ziploc), half in another. Put 1 in the freezer, one in the fridge. 48 hours later, heat and eat.
I swear to you...It's just like bread...same thing.

I believe you
...no sense arguing with a crazy person... ¬_¬
;)

Q: "Instant" leftover rice? Making leftover-like rice without the wait? (as in for fried rice)

FuzzyChefI have a bunch of recipes which use leftover cold rice: rice salads, fried rice, rice cakes, and similar. However, I rarely have large quantities of rice left over in the fridge when I want them, since we don't eat rice with dinner most nights. I've tried making some of these things with freshl...

At any rate, that is my experiment for the night. I am freezing three small containers of risotto at various degrees of doneness. I'll freeze them for a week, and then see which one works best.
I'm just now putting on broth, when it's hot I'll soak the dried shrooms, so it's going to be a while.

8:34 AM
Good show

I've got 2 cucumbers I need to use up. Like tonight. The idea of just slicing them and putting them in sweetened vinegar with a couple of onions leaves me pretty bored. What else could I do with them...like tonight? They've been in the fridge for a while but are still ok. (for now)

tzatziki?
then make gyros :)

Now you're really thinking like me!! :)
I need A LOT of lamb!

I prefer chicken gyros meself

I could go either way.

8:41 AM
marinaded in lemon juice, olive oil, garlic, oregano, and cinnamon
griddled to Maillardelicous perfection
chopped
wrapped in a fresh flatbread with tzatziki, crisp lettuce, wafer thin red onions, a zing of hot sauce, and if I was feeling adventurous, a handful of fries

My fave actually is half lamb, half pork. I went on a real kick once with Alton Brown's recipe and my countertop rotisserie.
"Maillardelicous"!! HA! That beats gusebumps.
You know what else I have in my fridge that needs to be eaten sooner rather than later (tomorrow will be fine)?
Talk about a 1st world problem.

go on

A 1 1/4 inch thick NY Strip.

by which you mean steak
ok
do you have any oyster sauce?

USDA Choice Angus. I do! The really good stuff even!

8:51 AM
ok
soy?

rice wine?
or sake?
or dry sherry?

dry sherry or vermouth

sherry

dry sherry- check

8:52 AM
cornstarch?
sesame oil?

Cornstach?? HA! 1 Kilo Sam's Club pack
Sesame oil??! Ha Enough for the nation.
(also a buy big and save purchase)

ok
mix 3 tbsp soy, 2 tbsp rice wine, 1 tbsp sesame oil, and 2tbsp cornstarch in a bowl
finely slice the steak, and add to the marinade
marinade for as long as you can

so far you are velveting.

without the eggs
next day, slice an onion and a green pepper

I was just about to say that :)

8:56 AM
finely
get a wok good and hot, add oil, drain the marinade, and flash fry the steak. Tip out and wipe out the wok. Heat more oil, fry off the veg with some more soy and rice wine
tip out the veg
add a good 1/4cup of oyster sauce to the wok and let it bubble a little, then add everything back and stir through
serve with steamed rice
and prepare to be addicted
naturally by rice wine up there I mean sherry in your case :)

How about 1 finely diced (and de-seeded) Thai chili in the marinade, and a bag of frozen stir-fry veg for the veg? (asparagus, carrots. green beans, cauliflower, yellow squash, celery, onions and mushrooms)? The frozen mix is actually pretty good, I use it all the time for throw together soup.

Did I say add chilli to the marinade? DID I?!
:P
but seriously, this dish is all about deep beefy umaminess, not heat
you wouldn't add chilli to a mushroom risotto, would you?

OOH! That reminds me...
damn that I can't just send you a pic

veg is negotiable, but not too much
and onions are a must

I agree. Sounds great! I'll save 1/2 an onion...that's all I can spare...

9:06 AM
should be fine for one

How 'bout some scallion?

how about you stick to the damn recipe?
:P
This is a case of KISS

I'm actually probably gunna share. I haven't been nice to CN for a while.

get his guy:

A: Pronunciation of (May I take off) my belt now?

user8543'May I' is pronounced 'meɪ aɪ'.

he's asked how to pronounce 'may I'
I've said it's pronounced 'may eye' which it always fucking is
he comments 'I'm not sure about that'
he seems to think that it's pronounced differently depending on what comes after it

weird...

9:11 AM
utterly
and infuriating
presumptuous little...

there...I backed you up.

lol
thanks for destroying my air of mystery

That infuriating feeling runs me off that site often.
Dude...It's my language!! I know how to pronounce "package"!
hheeee:)
Yeah, well like anyone will remember user-name that next time he sees it :)

now he wants me to listen to the video because he thinks the 'I' sounds 'unstressed'

I'm watching it now

9:19 AM
WARNING: EXTREME NINETIES ALERT
to me that sounds like a bog standard 'may I'
he's perhaps not enunciating as much as he could, but it's still 'may i'

He may need this lesson:
My son didn't break your window.
Every word in that sentence can subtly change the sentence by stressing the word.

indeed

It is only in THAT sense, that "I" would ever be stressed or said differently than any other time.

he's whining about not being understood when he says may I, then when he's told how to pronounce it properly to make it easier for people to understand him, he's talking about how he wants to speak fast like a native

Gaarrgg...I suppose I should write that there...brb.

9:24 AM
the two are incompatible, fella

9:38 AM
have you disappeared again?

No, it took me that long to type the damn answer!
And I copied and pasted most of it!

do you touch type?

No. And I've tried...and tried..and tried..I took typing in school (my 1 and only C), I've had Mavis Beacon (or whatever the hell her name is) installed on at least my last 3 computers...I've tried this damn shelf thing that hid my hands and keyboard...I'm hopeless. Today it's worse, I've got some kind of weird MS thing interfering with communication between my brain an fingers...especially on the right side, as per usual.

Wanna hear something weird?

9:52 AM
i've never formally learned, I've just used a keyboard since I was 8
@Jolenealaska always

I remember "My son didn't break your window" from what had to have been first grade (we moved, I was in a different school for 2nd grade). That was the sentence we looked at, for maybe 10 minutes.
Haven't thought of it since...

Memory is a bizarre thing.
Can I find my glasses? No.

huh, I never imagined you with glasses

I never wear them, except to drive, when I think of it and can find them.
so very rarely

10:02 AM
I am stupidly proud of having perfect vision
I had an eye test about 3 months ago, the optician said I had the visual acuity of a child, which he hadn't seen in months

Heehee:)

the rather attractive blonde Dutch lady at the checkout looked agog at my figures and said in wonder "What's it like being you?"
I just shrugged and said "I just show up and let the good lord work through me"
then walked out while the James Bond theme played in my head

Until a few years ago, I was that way about my teeth. No fillings :) HA!
That's an awesome story
I bought a few things from the bulk aisle a few days ago.
You're supposed to write the PLU on the tag.
At the checkout she put a baggie on the scale.
I said, "cumin 90625"
she rang a few more thing up...
she got to another baggie
"Sesame seeds 90994"
I type to slow for this story
You get it anyway...

go on, I'm listening
you performed feats of memory that would baffle neuroscientists

James Bond theme :) <shrug>, but I still can't find my glasses
It helps my Scrabble game though!

10:11 AM
@Jolenealaska all Englishmen have the James Bond theme playing in their head at some point during the day

OOH that reminds me!
Are you going to lose Scotland?
This is the only thing I've read about it for the last several days:

pfff, more like they're going to lose us
it will be close, but I think it will end up being No

Well put first line.

there's essentially a generational split
the young 'uns want independence, the old yins want to stay in the UK

How big of a deal is it to Joe Blow on the street? I mean in Britain?

10:19 AM
The SNP (Scottish National Party), the ruling party in Scotland seem to be basing it purely on ideology
@Jolenealaska In England, not much
in Scotland, it could seriously fuck things up

It seems that way.

The thing that strikes me is that the Yes campaign has no real answers

Give me a lesson, I said Britain, you responded England. ??

"we'll work something out" seems to be the order of the day
Britain is England, Wales, and Scotland

10:20 AM
the official name of the country is the United Kingdom of Great Britain and Northern Ireland
Great Britain is England, Wales, and Scotland

I thought Britain was only England, and the UK was all of the above!

no, England is only England :)

TIL! Big time!

though this doesn't show Northern Ireland properly
If Scotland bugger off it will be the United Kingdom of England, Wales and Northern Ireland
Scotland and Wales have devolved parliaments with many, but not complete powers
The Scottish 'Yes' campaign wants complete independence
but they will have to leave and reapply for EU membership, and they will lose Pound Sterling (ie the Pound backed by the Bank of England)
The vast majority of British oil and gas comes from the North Sea via Scotland, so they seem to think that will sustain them
they seem to have forgotten that oil and gas runs out

OOH EU membership!?! Woah! Any chance they would be denied??

10:26 AM
well, the process of joining is a long one
I'm not sure of the criteria

(sounds like a TNG episode EU=Federation)

there are a number of large financial institutions based in Scotland that have already said they'll move to England in the event of a Yes vote, including the Royal Bank of Scotland, which is 80% owned by the British taxpayer

That puts it in a light I hadn't considered.

the Yes people say that's scaremongering
that's because it's scary you fuckwits
the main influence it may have south of the border is that Scotland is a Labour (left/socialist-leaning) party stronghold
without the Labour votes from Scotland, the Conservatives (the more Republican kind of party) will be harder to oust in England
This is a problem because the Conservative party are almost all toffee-nosed aristocrats who have slashed benefits and increased tax breaks for themselves and their rich friends
In fact, one of the main reasons I think the vote will be so close is because all the Yes campaigns are posh Englishmen with RP accents

It's so easy as an American to say, "hell yeah! Yay independence!" But that they wouldn't automatically be a part of the EU is a scary mental image.

10:30 AM
i mean, have you ever seen our Prime Minister and heard him speak?

Right..I get it..

Basically, I'm all for Scottish independence in the fullness of time when the implications and processes are clear and planned for
but it seems like they are rushing into it just so they can say 'Fuck yoo, ya English bastards!'

You make a lot of sense.
1776 was different.

yes indeed
a simpler time
not to mention a continent's worth of natural resources and room to expand into
you know David Tennant, one of the Doctor Who's?
he put it well - "Why do we want to become smaller as a country?"
they want to model themselves on Norway - a peaceful, socialist leaning country that minds its own business and has good education and healthcare
but Norway is like that because they have a 40% tax rate and enormous duties on things like alcohol
the latter is a thing close to many a Scot's heart
I wonder how many of them would vote yes if they knew it was going to be 12 quid for a pint of lager

And you have to have some kind of base to start with!
You can't pull healthcare and education out of your ass!
hmm...

10:37 AM
well, they already control policy on education and healthcare
just not the budget

The budget is what I'm talking about.

well here's the thing
all the money scotland pays in tax goes straight back to scotland plus extra
Westminster subsidises various things
where is the money going to come from to set up new, independent institutions?

That's exactly what I mean.

and still the answer is 'We'll cross that bridge when we come to it'

I hadn't really thought about it that way, but, shit...

10:40 AM
they actually lowered the voting age to 16 because they know that the younger generation will be all Braveheart about it without thinking of their pensions and hip replacements

16????

most 16 year olds I know of are still struggling with the concept of walking erect, let alone making a permanent decision about their future

When was the change madeZ?

earlier this year, just for this referendum

16 blows me away...holy crap that's young...
literal virgins

10:42 AM
ha, not in Scotland
:D
that's probably not funny to a non-Brit

It made me smile anyway!

actually, there's a town in Wales called Merthyr Tydfil that has the highest teenage pregnancy rate in Europe
that's pronounced Mirtha Tidvil, by the way

Ok, beyond obvious limerick value..
How high is the rate?
High teen pregnancy rates (and STD rates) have less to do with lots of sex, and more to do with lack of education.

73.5 conceptions per 1000 15-17 year olds
sex education is pretty good here
it's more to do with having absolutely nothing better to do in a dead end town in South Wales

DAMMITq!!!!!!!

10:48 AM
:D

Is there a way to disable the CapsLock Key??
The damn thing is the bane of my existence.
I'm ready to just dig it out with a screwdriver.

that's about the only way :)

Stupid

or you could, y'know, not press it

UX here I come (tomorrow)

10:52 AM
ux?

oh, the SE?

It's all about this kind of stuff.

Google is all about everything
actually UX is more about designing UXs, but whatevs

10:55 AM
@Jolenealaska the link above has one file that will disable it for you automatically

Awesome! I love the first line :)

right, I'm going for lunch

CYA!

are you heading bedwards soon?

Hmm...I still haven't soaked my shrooms..
If I'm good...
But
I'm not at all tired.

10:57 AM
well, if you're around, I'll see you around :)
if not, have a good one

Time will tell! enjoy lunch.
