@Stephie Your stuff looks so photogenic. I'm trying to revive a week old messy starter from my Fridge.
I couldnät find any fresh yeast in my store. They usually have about 1000 packs on display. Who the frig needs fresh yeast for 5000 loaves???
I have 5 grams in the fridge, I'm doing a biga and restarting my starter.
I can work and make bread at the same time now!
@Cerberus The loo style was out at my shop. We aren't even infected (11 confirmed out of 150000).
I can work and coddle my dough the entire day.

@CaptainGiraffe That sucks!

1:48 AM
@Cerberus The water pressure in my shower is magical though. I have a 1 by 1 foot showerhead fixed, hot and sweet. If I use the detachable shower-head I can probably shower away next Thursdays oatmeal breakfast tomorrow morning, if properly directed. Are you doing allright?

Haha, one must make do.
Yes, everything's fine here.
I don't need much, so I'm mostly OK with the anti-epidemic measures.

So I got my half-dead starter.

Only the closed cafés, and the fact that meeting friends is mostly forbidden, are a pity.

It is. I'd just rather not kill mom, it's not a hard call for me.
This is what a half-dead starter looks like. 4 weeks without food.

@CaptainGiraffe Yes, of course.

1:57 AM
I'm going to be real brave in this dire situation and I'll try to revive it.

I keep my distance and am being very hygienic (at least about that...).
@CaptainGiraffe Hmm is it good or bad?

This is not a good state, I have time though.

OK.

=)
This is going to make it grow and be usable by thursday.
Stephie is so much more precise =)
The smells were wonderful from the starter, if anyone is considering me bat crazy.
I had pine, almond and hazelnut from that batch of rye.

2:12 AM
Hah!
I look forward to seeing your bread soon.

I'm hoping a nice yeastless bread no later than thursday gmt!
I'm going to adventure in to 78% hydration land.

Good.
78% is quite a lot, isn't it?
I haven't made bread very often in my life, nor any time recently.

@CaptainGiraffe thanks for the compliments! So how is your starter doing?

Yeast is also scarce here, so this question inspired me to check whether there was life in the well-past-the-best-before-date yeast in my fridge and possibly secure some for the near future.
That’s a 1.5 cup jar. Filled one third with a water-flour slurry (pancake batter consistency) plus a teaspoon of sugar and a bean-sized lump of cake yeast.
Parked on the radiator, as I was aiming for quick yeast growth, not flavor development, obviously.
The jar was overflowing in a bit over an hour. What’s missing in the photo above went into a second, significantly larger jar, fed again with a higher flour ratio. Let’s see how long we can keep it up.
Maybe it’ll get turned into a Hermann or something like that. Or I just use it all at some point.
Minor 2 has requested the right to name it. >.<

It's alive!

Very!

I've got a few packets of yeast in my freezer, but I have started this as well because there's a lot of food chain disruption here. I'm proofing my own bread as we speak, too

@GdD again: Thanks!
@GdD not baking (much, yet), as I’m still sick. So I do the bare minimum and the whole social distancing / working from home is actually good for me. And I need to buy more flour. The local mill expects a larger delivery midweek or towards the weekend.

Sorry to hear you're sick @Stephie, I had it last week and it was not fun, especially when I got short of breath!

@GdD exactly. Out of breath while sitting on the couch. Still trying to work from home, but I caved on Friday. Doctor wrote me a sick note (or whatever the correct term in English is). But with the Corona side effects, I am still checking my work mails and attend some meetings.
Hope you are better now?

I feel completely recovered now, thanks. Keep resting and get better yourself!

Ah, that’s good! I will be careful and take it slow.

Well, it may not be the prettiest Hefezopf ever, but the cohabitants ate a third while still hot.
Minor 2 asked for it when she saw the yeast experiment above.

11:00 PM
@Stephie Not good. Puffed up about a third during 24 hours.
@Stephie Your cohabitants seems to make solid decisions.
@Stephie This is my parallel project now. Thanks!
@Stephie Just checked. Wonderful, bubblier than a 2:nd grade schoolgirl on graduation.
It just exploded in the last 60 minutes. I'm feeding it again.

THERE WILL BE (tasty) BREAD!!!
@Cerberus I'm super comfortable with 75% so 78% seems like the next step, for fluffiness and happiness.

11:23 PM
@GdD I'm glad to hear it! So you actually had the new virus?
@Stephie Lookin' good.
I hop you will feel better soon.
@CaptainGiraffe Bravo!
