I've heard lots of good things about Slay the Spire, but as someone who's played a lot of Dominion, am I going to find it "Dominion-lite"? I'm worried it's aimed too causal an audience for my tastes with things like heavy RNG.

I've been playing a lot of AC Unity lately (thanks @DJMcMayhem!) and it was really almost surreal to see rooftops and buildings that looked very familiar in style. The kicker is that I'm pretty sure I watched that video ~4-5 years ago and it was just a neat parkour video for me.

I like it more than Dominion. There are a couple reasons why:

1. The deck scaling is more fun. In Dominion, you can't really have exponential growth be viable, because it's no longer fun for other players. (This is why engines take forever to build). However, in StS, you need a scaling deck by the end.
2. Adaptation. In Dominion, your deck needs to do one thing: get victory points. However, you need to fight wildly different enemies in StS, and your deck needs to be adaptable. (You also need to adapt how you play each hand based on what your enemies are going to do)
As far as RNG: I think they are about equivalent. There are cards that trash to allow for tiny decks, you can permanently remove cards from your deck, but far more often, decks typically draw enough cards to be sustainable.
Think about it this way: I have to win 30 games consecutively with my deck. For that to be possible, you need a deck that is consistent, meaning that the effects of RNG can't be that pronounced
I was actually listening to an interview of the developers, and they were saying that they had considered a multiplayer version, as well as a version where you play the spire, and both of those sound absolutely terrible.

Playing the Spire as an alternate mode might've been cool to see but I think is a weaker main draw than what we got

I'm also not sure it's that comparable to Dominion since the deck building doesn't happen during the match. It's more like an MtG draft where you play a match after each card you add (...ish).
 
At the bare minimum, I'd probably compare it to Ascension first
