I’ve always felt that 店舗 can refer to different locations of a given (chain) store, but 店 can’t really. But no dictionary entry seems to support that, so I’m not sure. Is it just me?

yeah, 店舗 is used specifically for referring to different locations of a given business/chain store, while I think 店 can mean both a given business/chain store and its different locations.

though i should add that the "different location" sense is the vastly dominant one, i think.

Hmm... 「別の店に行こう」って言ったらdifferent location (of this chain)じゃなくてdifferent storeになりますよね？「別の店舗に行こう」って言ったらどっちかと言えばdifferent location (of this chain)になるような気がします…
