my daughter was complaining that when she was 18 i was concerned about her walking home from Bart around midnight (a mile or so away) but I showed no concern about my son who is now 18.

my wife, also a black belt, broke somebody's nose once. in some kind of competition. they asked her to apologize and she said "i don't see what i've done wrong."
karate in competitions is somewhat formulaic and routinized. but the person she was sparring with had a history of pushing the boundaries and relying upon other people to hold back.
so she got an elbow in her nose and maybe doesn't do that anymore.
i don't think my wife intended any of it, but the elbow was out there and maybe don't walk right into it.
i wanted my daughter to take tkd or something, but she wasn't having any of it. i think the self defense classes do not teach much useful in the way of physical skills.
what your wife did was well within the norms of such fighting.

Common to make things extra crispy because after the first frying, the stuff inside is soggier and the water leeches to the fried outside. Then if you fry it again, it gets rid of this after it has sat awhile.
