SharePoint actually has some rest API that you can use to update list items on a site that expects a different date format (dd/MM/yyyy VS MM/dd/yyyy and some more caveats I won't annoy you with) base on the language the site was created with.
PS: obviously, under the hood those dates are stored in a database that is completely unaware of the actual UI visualization details, so that is just useless "make the dev jump thru some fire rings" stuff
