I still feel light sabers are still a display referred phenomenon. If they actually emitted enough light to flare like that they'd light up the entire room.
They are inherently faked.

@GiantCowFilms Point is that it is the exact same issue. Same as fire.
@GiantCowFilms Most folks hack fire to include a colour ramp to white, yet if you look at a typical fire there is no white in it unless you manage to allow your eyes to fully adapt to it as a sole source.
The actual white core of fire ends up being a convention we have learned from photography.
