I think that the phase marked as "Fluid" is probably supercritical.
 
Also poor CO2. Stress kills.
 
The "normal" phase diagram, with gas+liquid+solid resides in a minuscule region in the lower left corner of that diagram.

To me, there are too many fluid phases. Molecules in a solid are ordered, like soldiers in a formation - no wonder you can arrange them in a multitude of ways. But when there is a complete chaos, when they are moving, bouncing, turning this way and that, never standing still - how come it's possible to have two different manners of doing that? I have a master degree in analytical chemistry so I'm not a pupil or uneducated person. I think some solvents which are non-polar can disaolve some degree of fats and at the same time surfactants like CTAB can eliminate other degrees of fats from Paraffin.
