@dev0 Looks a bit lonely with your question just hanging there, so I'll kick off an answer. I've got a Samsung Galaxy S with the TouchWiz UI, and a Motorola Xoom with just the stock Honeycomb UI. Previously I had an HTC Magic which (as it was before HTC ported Sense over to Android) was the stock Android UI too.
I much prefer the stock UI, in fact the fact that HTC put sense all over their phones was my main reason for not getting another HTC (I did after all ask this question back then android.stackexchange.com/questions/644/… ). TouchWiz is a comparatively light touch UI (though they did mess a few things up in the original Eclair version).

I've got a Galaxy S Vibrant with a custom 2.2 ROM, but still TouchWiz. I'm probably in the minority but I actually prefer it, mostly because the app drawer is paginated :P. As GAThrawn says it's pretty light so I don't really have many problems with it.
I also have a Kindle Fire (not rooted yet, I haven't used it very much) and an original Dell Streak, which is nothing special :P
My next upgrade might be an SGS 3. I'm definitely a Samsung fan, though I don't like the Galaxy Nexus. I personally don't understand why everyone likes the screen, the first thing I noticed was how grainy it …

@dev0 Hm, let's see. My EVO is my oldest device, got it 2 weeks after launch in the US and rooted it way back when it was still a manual process. I run CM7 nightlies on it (I compile them myself now). I'm due for an upgrade like...next month? I think I'm going to try to upgrade my wife's phone though because I don't really want to give up my EVO. Especially not for anything Sprint has right now...
I really tried to like HTC Sense, but I just can't. The AOSP UI is much nicer, in my opinion. Got my Xoom next, it's running early CM9 builds.

Hehe, and i'm right in the midlle of you two... I love their Design, but hates their UI...
About the Galaxy Nexus screen; it's not at all too big, it's like a 4.3 inch phone in the normal use, and only when you watch youtube etc, it becomes a 4.5 inch phone..
I have the GSM version of the phone, which are slimmer, maybe that does make a difference in how big it feels, but i have no problem only using one hand :)
