Whether they will be stored in the format suitable for your purposes depends a lot on what you are planning to do with those data. Anyway, many websites with live scores also have some kind of archive. — Martin10 mins ago

That is not exactly true, For example, on Flashscore or Soccerway I can go back to history as I wish to. (Although I have to click to display older matches.) — Martin46 secs ago
