practically, implementing it has proven ... difficult, because I wanted essentially a way to link code submissions together

The entire point of the thought experiment is to prove: only a human can do that

That's what the monkeys would do without intervention
As would a human getting stuck on showing it's time to stop the proof, and then delving into a recursive proof chain of "it's time to stop proof x-1 proved by proof x"

It's the same with Shakesphere, an infinite number of monkeys could write Shakeshere but it would still require someone to say: "Hey, this is Shakesphere". Else it would just get burried under the nonsense and be no use to anybody
it's like that library that has every book ever written
The human specifically is unable to follow any kind of algorithm to determine when to stop the proof, because as you say such an algorithm would be self-contradicary.
