I freeze and carry cured beef bacon (I can't eat pork) for short 2-3 day trips. I've never tried to carry it longer than that.
I don't know that it's safe, but since I cook it through, I worry less about nasty microbes

I'm not sure what major grocers you have in your area. Here, both the Publix and Kroger carry it near to Jewish communities. AFAIK Gwaltney is the only brand that makes it.
