There are quite a few results on Google Scholar for "biology.stackexchange" although the majority that are real research papers are studying Q&A rather than using the answer content here
ncbi.nlm.nih.gov/pmc/articles/PMC6726748 is one exception I found; from the topic and contents I think this is a student research project but nonetheless, it's official enough to be on Pubmed :)
