I think (I might be wrong) that one thing I'm good at is performing well in such 'impulse' interviews. I focus mostly on appearing calm and reasoned, but YMMV.
So they might be looking for enthusiasm, team thingy and approach to problems
Meh, I think it's better to focus on what you can portray as the best version of yourself than try to exhibit personalities you assume they'd like.
Again, YMMV.
I do think focusing on that wouldn't help though.

and be able to defend myself on some lacking points rather than making dumb excuses
Another thing that usually calms me in such situations is acknowledging my elevated heart pulses and blood pressure, and the fact that most people in my position would feel the same thing, and ignore it while responding to them.
There going to be some bread and butter questions too. Should prepare an outline for the answer for it

It usually becomes more of an evolutionary response then. The aspect you can't control won't affect your performance for the most part.

Writing is a different experience and trying to adapt from it on the go can backfire. IOW, don't delegate what you would say to something you've seen earlier. Let the mind make the sentences
