4:32 AM
As my dad reminisce about the old days.....

When I was a young man, I made my living by shipping construction supplies from village to village by boat. Since I had to carry a lot of heavy supplies on my shoulders, I developed lots of strong muscles and became really buff and handsome. All the girls in the village thought I was sexy. And because I was so sexy, as I pulled my ship against the dock, all the ladies washing their laundry by the riverside would wave their sunglasses* and flags* to welcome me.....

4:44 AM
Aww that's cute.
But I have to go to bed.
Adios!

12 hours later…
4:37 PM
I put the first version of my 4th of July ice cream into the freezer, but it looks quite messy. I hope I will find time for a second version.

Jay
4:49 PM
@rumtscho what kind of icecream. what method did you use to make it

@jay vanilla philadelphia ice cream
for the 4th of July blog special, some of us are making red-white-blue ice cream
I am layering the white ice cream with colored syrup

Jay
ohh hmmm im from philly and im not sure what makes vanilla ice cream philadelphian

and I did it wrong, it mixed badly.
philadelphia ice cream = no egg yolk, no starch. Only milk, cream, sugar and flavoring.
french is with egg yolks, gelato is with starch.
oh, and I like your dad's story @jay

Jay
@rumtscho thanks. i thought it was really funny
and he talks like hes really old but he's only like 47

I don't find it funny, I find it fascinating
It is so easy to forget how different people outside of our culture live - even when they are separated from us by minimal amounts of time and space

Jay
4:53 PM
chat is lagging for me

and sometimes not separated by time or space at all, just by tradition or interests

Jay
yea i cant really imagine seeing my mom selling water spinach.
actually i dont even know what that is lol

why not? she is still in the gastro business, you said

Jay
i dont know lol its just strange to me.
and its kinda hard to imagine your own father as a lady's man haha

why? Most lady's men become somebody's father :)

Jay
5:00 PM
lol i know.
i bought a baking stone and am goin to make bread today
i want to see the difference itll make :)

nice
my ceramic pan failed today

Jay
and im going back to the very first bread i made from the bba, the poolish ciabatta
failed how

and I think I will buy a small iron one
started sticking like crazy.

Jay
:(

The problem is that all iron pans on Amazon (there aren't many of them) have low ratings - people say they are bad quality

Jay
5:03 PM
did i tell you? i almost burned down my house a week back

@Jay no
How did it happen? Deep frying?

Jay
it was finals week and i was studying late and i was hungry so i put some eggs in a pot to boil
totally forgot about it. and i fell asleep

on a gas burner?

Jay
yea
the smoke smell has only just recently cleared

ouch. Were your flatmates home, you said they were going away for an internship or something?

Jay
5:05 PM
2 of them are home
it was one of them who shut off the flames lol
i felt so bad... haha not just because i almost burnt the house down but because the whole house smells terrible for days
burnt eggs is not pleasant

wait, the eggs were in the shell, right?

Jay
yup

so, was it the shell that burned, or what?

Jay
the whole thing was like a dried black thing
i dont even know how to describe it
i threw my pan away too which was sad because it was one of my nicer pan but it was nonstick so it was completely ruined

Ah, so you burned the Teflon. I see.

Jay
5:08 PM
but at least i still have my aluminum stock pot
its great but sometimes its a bit too big.
its awesome for making soup and stew
it puts even heat through and i never have to stir when i am making stew
i remember having slightly burnt bottom if i didnt stir with other pots when making stew

A: Best Practices for Cooking with Psyllium Husk?

RexiI love adding ground psyillium to my coffee. 1 or 2 teaspoons to a full cup. It is much much better than those crappy fake orange flavored sugared fiber laxatives I tried to take before discovering psyillium. (My Coffee Recipe: every morning I make my coffee and instead of milk and creamers, ...

@rumtscho im confused, this person is talking about paleo bread recipe. isnt bread/baked goods not allowed in paleo diet?

Hi.

Jay
ho
lol! i meant hi
im not even going to correct that because it made me laugh

:)
You're not drunk again, are you? :P

@Jay read the recipe, it has no grains
The point of paleo is to use no farmed products (grains or dairy)

Jay
its 1:20pm... of course not! lol
@rumtscho oh i see
i guess i just didnt understand what paleo meant exactly

5:23 PM
Calling something baked from almond and coconut flour a "bread" is a bit of an exaggeration in my eyes, but hey, these people are probably killing for a sandwich.

Jay
I think you can definitely make "bread" from almond flour
never used coconut flour before tho

5:40 PM
@rumtscho wouldn't it be better to split your question about cookware?

@Mien I'll think about it
The ease of seasoning is probably independent of the induction heating qualities, right?
@mien how is it going about the colored ice cream?
I made one version today, waiting for it to set. But I don't like it, the syrups mixed a bit. Already planning the next vesion.

@rumtscho Haven't tried it yet. I have exams.

The problem is that I don't know what to do with the ice cream which doesn't meet my lofty criteria. I can't eat it quickly enough, and my tiny freezer is full.

Adopt a cat.

@Mien oh, I forgot about that part. Any good news yet?
@Mien I thought of giving it to a neighbour, less work that way. And I might meet some nice neighbours.
But I don't know what to do if it turns out that my neighbours are creepy.

5:44 PM
Last one is in a week :) Results 5th of July I think.
Sure, neighbors would like it.
Well, at least you would know they're creepy.

@Mien But now they don't know that they have me as a neighbour. If I bring them ice cream, they will notice it, and will also think that I am trying to socialize with them.

Jay
@rumtscho isnt that life and meeting people in general...

@Jay If I happen to meet a creep, I feel better if he isn't my neighbour.

@rumtscho Don't get me wrong, I think it's a good idea :)
Wouldn't you want to know if you're having a creep living next door? :p

@mien I split the questions
@Mien Assuming that there is a creep living next door, I think that I have a clear list of preferred outcomes, starting with the best: 1. I know he lives near me, he doesn't know that I live near him, 2. I don't know he lives near me, he doesn't know I live near him, 3. I know he lives near me, he knows I live near him, 4. I don't know he lives near me, he knows I live near him

Jay
6:05 PM
@rumtscho yea i guess lol

It doesn't even have to be a creep. Just somebody boring who wants to socialize and sees my practical gesture as the beginning of a friendship.
I don't want to deal with such a situation.

Jay
lol

2 hours later…
7:53 PM
@rfusca how is your carbon steel pan performing?
I need a new pan, and just got an answer from somebody whose carbon steel pan started warping after a year.

2 hours later…
Jay
10:06 PM
@rumtscho so i think the reason why i am not getting super awesome crust is because my steam pan isn't the correct kind. it doesnt really seem to make that much steam.

10:26 PM
@jay don't know about the pan, I have never baked with steam

Jay
okie dokie

@jay about the couche, don't machine wash it. Flax is a very difficult fabric.

Jay
@rumtscho yea i wouldnt have machine washed it

If you absolutely have to, wash it per hand with gentle detergent, and dry it like wool

Jay
if i wash it would just rinse it in my kitchen sink
how do you dry wool?
i oprobably wouldn't use any detergent either

10:28 PM
don't hang it, put it between two frotee towels, and change the towels every 6 hours or so
and when it is half-dry, spread it somewhere (e.g. on a table) to dry completely.
It is very likely to shrink else.

Jay
i see
thanks

Oh, and flax wrinkles a lot and is hard to iron
hold it spread completely flat (between the towels and later) until it is dry.

Jay
ohhhh nice i just noticed something
the bottom of my bread isn't burnt
when i bake it on a sheet pan the bottom is always burnt black and i usually but off teh bottom
but when i baked it on the baking stone, the bottom is perfect

Why? My bottom has never been burnt

Jay
not sure

10:31 PM
OK, not never, but normally not.

Jay
i thougth it was normal because i didnt know toherwise

Maybe you should calibrate your oven. At least measure if the temp is what it says on the dial.
