Anyone here?
@Jolenealaska hey
Kinda!
I need someone who DOESN'T have an ATK subscription.
Logging out is not sufficient?
Just to check if a link is paywalled
00:38
use an incognito window, ctrl-shift-n in chrome
I always get automatically logged beck in
OK, I can do that. Thanks.
If they automatically log you in there, then they're doing some crazy stuff.
The incognito worked.
Intentionally logging out probably would have worked to, I thought I had logged out before and was automatically logged back in, but I'm probably remembering it goofy. It wouldn't be the first time.
It logs me out spontaneously all the time, so... surprised your problem is the reverse.
00:50
Yeah, was noticing that, and also wondering why you would want refined sesame oil.
I've never had it, it is supposed to be very neutral, with a high smoke point.
I want to experiment with the smoke points of different toasted sesame oils, but that is going to be a bit spendy.
Aren't there cheaper sources of neutral oil, though?
Oh I'm sure.
I changed the link to untoasted sesame oil to one not so flaky.
Avocado oil is supposed to be the highest smoke point of all, but the price of that stuff is ridiculous.

Can somebody explain what @Jefromi 's comment "Cookies! (There are hats; I'm allowed to have fun now, right?)" means? I feel like there's some kind of special joke going on in the comments of cooking.stackexchange.com/q/51651/24248 ...

1 hour later…
06:06
@setek "What should I look for in a cookie jar?"
And the hat bit is partially to make the comment 15 characters and partially because of the frequent complaint about mods being no fun.
@Jefromi Ohhhhhhhh hahahaha I get it now :) The hats bit threw me :) Thanks!

3 hours later…
09:25
@Jolenealaska this offends me deeply

4 hours later…
13:09
@ElendilTheTall Good Morning!
13:53
@Jolenealaska hey hon
Hi there! I'm wrapping up an answer, then I'll be back with my morning coffee.
okey dokey
14:11
I'm back!
I went bed early last night, slept through, and am pretty alert this morning. YAY! How are you this fine day?
not bad, not bad
xmas can't come soon enough
office is v. quiet, which means the days are ddddrrrraaaaaagggggiiiiinnnnnggggg
So that is over?
good morning all
Good Morning @rfusca
@Jolenealaska ?
@rfusca mornin'
14:16
made a big pot of chili last night
mostly kenji's chili recipe
I get sick of the crowds at stores and ubiquitous Christmas music. I'm always glad when it is over.
chili is so much easier in the oven - no stiring constantly to prevent burning
Although I catch myself singing Falalalala lala la la.
constantly?
I stir mine once an hour if that
ya, thats too much lol
i just pop it in the oven overnight
14:18
I've never done chili in the oven, makes sense.
he has an oven 'baked' red sauce which is awesome
yes, it is awesome
great depth
and fish sauce
who'da thunk it?
the chili has sardines in it
interesting
for umami?
14:19
well I never
yup
I've used anchovies for that purpose
in meat sauce
and with lamb
my bad, i meant anchovies
fuzzy brain this morning
The only I can think of that I have ever used anchovies for is Puttanesca. I don't think I've ever touched a sardine.
me either
14:22
Aah, been there!
Elendil's First Law and all that
@rfusca how goes the photography?
getting much done for yourself these days or is it all church stuff?
@ElendilTheTall little time in general for myself
some family pics I still need to process
just very little time :?
:/
yup
I hear that
I am let out about 4 times a year to indulge myself
otherwise it's snatching the odd few shots here and there
I have a sweet new lens - Sigma 18-35 1.8
the quality is stupid
like a bag of primes
between that and a battery grip for my D7000 I at least look like a total pro
@Jolenealaska sous vided anything new?
niiiice
I agonised over what lens to get
14:28
i still enjoy the portrait length best. my tiny pentax 70mm pretty much lives on camera
Nope. I am going to break out my Walmart credit card today, cause I really need some groceries even thought I am completely broke. I'll be looking for something good to sous-vide.
I was in the market for a standard zoom - Nikon's 17-55 is big, indestructible, decent IQ but super expensive even second hand. Sigma and Tamron's are about equal but build quality possibly an issue.
yup
Then someone suggested the 18-35. New lens, excellent build quality, ridiculous IQ, and 400 quid mint condition second hand. Sold!
wow, nice
i would love, love, LOVE to shoot more but I just don't have time
14:30
I find I don't really use portrait lengths much. I just used a 35mm 1.8 prime for about 2 years and it did the lot, I just missed the wider end for landscapes
Ya, I just don't like shooting landscapes as much
so 18-35 is fine for me. I may well get an adaptor to use my dad's old Rikonon 50mm 1.4 though
nice
@Jolenealaska check their shoe department!
I also have a 135 f/2 in the same mount (Pentax K) but the MFD is something on the order of 6 miles
lol
14:32
If I go to Sam's Club instead of Walmart, I may get a bag of avocados. I want to do the avocado experiment part 2 with Vitamin C. I was holding off until I got sodium Metabisulfide, but then I was realized that was dumb. No one is going to buy that for their guacamole anyway.
@Jolenealaska I like a nice Na2S2O5-mole
I have a tennis shoe that has lost its mate. Maybe I'll sous vide that. I'd have to use a big garbage bag to seal it in.
:)
it would certainly be aromatic
it would probably be not dissimilar to a mature camembert
Ha!
@Jefromi I incorporated the relevant comments into that nut flour answer, so you can clean up comments now if you want.
14:40
so
are we all set for christmas?
food planned?
ridiculous sweaters purchased?
I was going to do a fancy Christmas spread, but I can't afford it.
come to mine
I wish :)
Brisket, turkey, roast potatoes, green beans, clapshot, parsnips, Yorkshire pudding, pigs-in-blankets, cheese-in-blankets, lashings of gravy, horseradish sauce, cranberry sauce
Glazed chocolate mousse cake for dessert
I'd like to do something a bit special, preferably with the sous-vide, but it can't be much more expensive than a "normal" dinner for two.
That sounds great.
14:51
I'm sure @rfusca would have you
See? No objections - book a ticket for Georgia!
perhaps a midnight train
That's too expensive a trip too. I can maybe get to Wasilla.
Maybe the Palins will have me.
For Christmas moose.
ha, she's aware of that
I've posted that a few times :)
oh lol
i have permission to try it for christmas
14:54
I'm not crazy about turkey, but that does look good.
I'm going to remember that one for next Thanksgiving, since that's the "turkey is required" holiday.
Have either of you ever tasted Five Spice in a fried rice?
nope
what you say about sesame oil is right, I think, but possibly for the wrong reasons
I think heat is the key
I think a stupid-high heat is what creates the smoky flavour of good fried rice
Not for me, I never fry my rice with extreme heat, and I make great fried rice.
home hobs can't get that hot, and sesame oil is the best way to reintroduce the smokiness
I just use normal medium high heat.
I upgraded my stove and without changing anything else, my fried rice definitely tastes different.
15:06
@Jolenealaska every recipe I've ever seen says to get the wok smoking
but if I'm out of Sesame Oil, forget about it.
I'm not saying you're wrong, I'm just saying that's the standard method
I'm sure it is in restaurants, but at home, the results are just fine with normal heat. My fried rice is as good or better as I have ever had, even in Korea.
The letting it sit still to get a crust is important for a few reasons.
That may also make up for the lower heat a bit too.
15:22
I just noticed something. First I had this link in a comment to my Fried rice answer, but I switched it out because the title said refined but the label in the picture said unrefined.
Hi @Cerberus
Hi @AJHenderson
@Jolenealaska hey
So I switched to this link yesterday. The title says refined sesame oil, the picture is of refined sunflower oil. They can't get anything right!
(click on it to see the weirdness)
Good morning.
Mornin Cerby, been to bed yet?
Morning folks
15:33
@Cerberus You ought to use paint or something to create a temporary avatar wearing three different hats. It would be so cute.
Hah.
Morning, lady and gentleman.
If I made you a good one, would you use it?
I slept from 8AM till 4PM.
I'm sorry, I will not participate in this hat thing.
AWESOME!
@ElendilTheTall just ordered one of these for video work: amazon.com/gp/product/B00MIXFBL0/…
15:35
How about you?
I slept from 8pm to 4am.
And I slept through!
I never do that.
Well done!!
And 8PM is actually not a crazy bedtime!
@rfusca what does it do? record separate audio?
never really done any video
neither is 4am for a wake up time
Mmm I guess not.
15:37
@ElendilTheTall yup, its a seperate audio recording unit
The most important thing is that you made it through 8 hours of sleep.
but it sends a line into the camera so that you can easily sync up the audio in post
cool
are you still using Pentax?
yup
i was pissed off for awhile because the video and occasional picture was coming out with bad artifacts
then discovered it was the SD card
changed cards, no issues since
@rfusca shiney
I kind of want an H6n
but can't justify it since I already have an h4n
15:41
yup
i didn't own any and didn't need something to record with its own mic, so that seemed like the way to go
That's why I like the H6n, it's modular and you can use an extra set of inputs instead of a mic
plus now I can switch to using the shielded xlr cables we have instead of the wimpy 1/8" stereo jack plug
and a 6 track recorder that is hand held is just epic
indeed
but yes, XLR jacks are key
I had the XLR adapter unit for my Canon GL2 back in the day too
15:44
@AJHenderson yup
i was getting so much noise on my audio - i'm hoping this helps some
adobe audition was doing a decent job eliminating it, but sometimes left it really hollow
what are you using mic wise?
@rfusca finally moving forward again
hopefully Friday, wasn't clear if that was going to be closing friday or the bank being ready to schedule the closing on Friday
but we'll find out I guess
@rfusca hmm, I didn't even realize they made an XLR shotgun mic
@AJHenderson yup
@AJHenderson lol
at their mercy
based on reviews and stuff, I don't think its a mic issue
yeah, I was thinking the same, though it is a DIRT cheap shotgun
so "good for the price" isn't necessarily saying much
does the tascam unit provide phantom?
(and we're still on topic since final output from recording is sometimes called cooking :) )
15:57
@AJHenderson yes
@AJHenderson oh, there's cheaper :P
@rfusca that is likely to help too
@rfusca yes, but we don't speak of those ;)
indeed, indeed
I'd definitely love to know how the Tascam unit works out though. I didn't even know they had anything that cheap on the market
looks like a great price
the Mk1 version is like 30 bucks cheaper even
I was reading a B&H article on dslr audio options and it was one of their top recommendations
so, i'm hopeful
it should come in tomorrow
I suppose the H4n is getting pretty cheap now to since the H5n and H6n are out
16:04
i've got a big video production on saturday morning
how big is big?
oh, not 'big'
we're shooting some videos for our kids church stuff
but its outdoors at a baseball diamond
i haven't done much stuff not in the studio
hope you have reflectors
and crew
16:07
i have some yes
i'm praying for a nice overcast morning lol
are you close micing as well?
wind is also a pain
shooting outdoors can be great for lighting, but is a pita for sound
we're boom mic'ing
make sure you have an active audio monitor for wind conditions and such
not sure what you mean by that
ie, someone should have headphones in listening to the audio as it is recorded
16:08
oh, of course
do you have an ND filter as well?
I do, yes
we're got this kind of windscreen
ah, that should help some too
and a cheaper foam one
there's a small chance of rain - i'm hoping that goes away and we're just left with clouds lol

2 hours later…
18:17
@Jefromi In case you're interested, I had another odd Google search. I was searching for `Snapdragon 801 coprocessor`, but the second result, and several results on the first page, do not mention `coprocessor` at all, nor any synonyms that I could find (such as `co processor` or `co-processor`). Some of the odd results say "missing: coprocessor", but the second one and a few others do not.
https://www.google.com/?q=Snapdragon+801+coprocessor&gws_rd=cr&ei=P8iRVNfFOYLaap-NgpAO#q=Snapdragon+801+coprocessor
@Cerberus Welcome to the magical world of search and invisible evidence (e.g. anchor text)!
Yay!
Seems to really require it if you have double quotes, so... yup.
Indeed, verbatim helps (but disables synonyms).
What is anchor text, exactly? The word coprocessor isn't even in the source of the page of the second result.
Intext:coprocessor also helps.
Oooh, I'm torn
One of the best contemporary Bulgarian musicians is playing in the next city, 20 minutes by train, this Friday
18:24
Search engines use the text of links pointing at pages to help rank too - for example you might link to seasoned advice with text saying "awesome cooking Q&A site" and then they'd know the page is "awesome" even though it doesn't say it on the page.
I jumped at the idea of hearing him
and then I noticed that he's there with a new project - together with an electronic music artist
Electronic is one of the genres I like the least
This musician normally interprets folk and jazz music, playing a special type of flute
This is his typical style
Dumb example, but this kind of thing actually really helps because sometimes people describing a page use different language than the website itself uses, and sometimes the way people search includes language like the former.
@rumtscho Electronic is a pretty broad category; perhaps this will be in a corner you like?
but this is what he's doing now
@Jefromi Ah, okay, that is true.
@Jefromi I'm a bit close minded there, I'm afraid
18:28
@rumtscho Oh, you know already, oops.
Ahh, sorry, forgot it's in German
but "Drum&Bass- und Dubstep" should be understandable
I tolerate Dubstep in kayaking videos, the young boys can't leave the fingers of it
do you find this music easy to listen to? Or are you fans anyway?
What is the bit at about 4:00? It seems very familiar...
@Jefromi I assume you mean the woman singing in Balkanski, not the end of the Santorini video?
It's a popular Bulgarian folk song
Yes, sorry, the second video, the woman singing.
I wonder why I know that!
It seems like a very simple melody, maybe it's part of another song somewhere
The only two Bulgarian folk songs of "international fame" are others
18:37
Yup, might be. Anyway, yeah, might not be a concert I'd choose to go to, but I know we all have our own weird preferences.
This one was sent on Voyager, to represent the music of humanity
This one was used on the soundtrack of Jesus of Montreal, a really good movie
I think it didn't get an Oscar despite a nomination, but I love it nevertheless
Hello.
hello @cindy
@rumtscho I shall add that to our list, especially since my wife is from Montreal!
Question for you guys. What is a CV and how it is different than a resume?
18:47
It is the same thing.
CV is the international term.
Some countries or places have local terms in addition (or instead).
Thank @Cerberus. I noticed it in my job searching. Had never seen it before.
CV = curriculum vitae
Hi @Jolenealaska.
The little course of one's life.
18:50
It can also just be a list in a bio, not necessarily a separate document.
Hi Cindy
@Cindy It's trendier.
Okay. I'm working on a new resume format and a new cover letter. I thought mine was pretty good but........
@Jefromi How so?
I gotta go pick CN up from the hospital. Apparently he had scheduled heart thing yesterday and they kept him overnight. I didn't even know he was gone.
CYA
@Cindy I get the impression that people used to always say resume but CV is becoming more common.
See you later @Jolenealaska.
Yes, in years past it was always resume. Even with the searching I'm doing now I've only seen CV one time and it was worded something like 'attach your CV or resume'.
18:57
And probably something similar about older vs younger companies (or HR folks).
Most companies now use outside firms that specialize in talent acquisition. I knew that in the last couple of years the company I worked for had transitioned to that but I didn't realize how widespread it had become.
@Cindy I find this disturbing. Personnel choice is very important and depends on factors not easily explained to outsiders. How is a company going to keep its culture and identity if it leaves somebody else decide who it is made up of?
Well it always comes back to the manager's decision. The real downside is you only get to see resumes they pick and the don't always understand things that may be important. I can't tell you how many resumes I had sent to me from persons in locations not suitable for the position. Or from persons who were totally not suitable.
They actually sent me one and in it's entirety said "I want this job". No contact info or anything.
Plus, they are not always timely. On several occasions I had to constantly call and e-mail to get them to send me candidates. It was much easier when we had access to applicants.
19:17
So, you had to pay an intermediary to do the job you used to do yourself, and it ended up being harder/less efficient for you, and they delivered a worse quality than you would have done (in an initial screening)?
Exactly.
This seems like a good example of why McKinsey and co should be avoided.
It sounds like the kind of thing they'd come up with, and sell hapless companies as the next big money saver.
True. And I don't really understand why the trend started in the first place.
It's usually a matter of a perverse incentive structure. I'm sure that every single involved person had a very good reason to do their part in it. Good for them personally, that is.
The other thing that was so frustrating is that managers are still expected to recruit. So we would go out in the field, to job fairs, talk to people and get them to apply. Then we hit the wall. We had to pull teeth to get their application and resume through the system. We were totally dead in the water and at their mercy. Bonus -- how quickly we got positions filled was part of our performance evaluation.
19:25
@Cindy I hope that at least that last part can be different in your next job.
From what you told us, it seems that your old company had some very strange HR policies. Hopefully others are doing it better.
I sure hope so. That's why I need a break from management for a while.
Or, one of the reasons/frustrations.
Yes. Most of the companies like that have good policies in place but they run renegade. The policies get quite abused. And as a manager you don't really have protection.
19:47
hola all
@rfusca hi @rfusca
Hi @rfusca
hows it going?
Status quo. Not much new here. Still doing the job search.
take up welding
good money there
19:58
That's true. There are a lot of areas I wish I was skilled in.
so, become skilled in them
people aren't born welders ;)
It's hard to get an apprenticeship at my age. :)
bah
I did think about going back to school but money (or rather lack of) won't allow for that right now.
yup, i understand that
money. pssh
20:06
What line of work are you of in?
@Cindy oracle database administrator
plus, I'm creative director for a church
Way cool. I have often wished I had gone into some type of computer based field.
i kinda stumbled into it
Question - How do you guys keep up with the ever changing landscape? That's how I got into my line of work, too.
was working for this computer during college, and was doing just stupid hourly stuffy - data entry and the like. Got done so quickly they asked what else I could do, and said I was good with computers. So they gave me Excel stuff. Excel became Access, Access became MySQL and PHP, that became Postgres and that became Oracle
20:13
When I was young I had no idea what I wanted to do. Then I got a job with Unilever (Chesebrough-Ponds division). I was hooked. My son was totally opposite and had clear ideas. Stayed focused etc.
Ah, you worked for the Dutch.
Yes. Good company.
@Cindy nice
I've been fortunate in that I have worked for some very good companies. I guess the other that I enjoyed as much was J & J. Learned a lot there, too.
Johnson and johnson?
20:22
Yes.
20:34
Gotta run. Nice talking to you guys! :)
20:55
Bai!
21:53
Someone is on a bigtime kick to close questions. There are 9 questions in my queue with a close vote as "primarily opinion based".
I am very ambivalent about the cheese pairing one...
I wonder how they found all these flavor pairing questions at once!
