00:50
I just picked up a great-looking pork loin. About five pounds for less than $9. Going to try my hand at steamed pork buns tomorrow.
More like 5.5 pounds actually.

2 hours later…
02:36
@PrestonFitzgerald steamed pork buns are on my list of things to try too.
03:14
@PrestonFitzgerald pork buns are one of my favorite food groups
@logophobe I find them so rarely... Really excited about trying to make them myself.
So good.
03:31
good luck
doing your own rice dough and all too?
03:50
Definitely making my own dough. I've been comparing recipes. I'll probably give it a shot with AP flour
04:12
The thing is though, I'd really want to use pork belly. But that's just me, I love pork fat.
05:02
I have now made some penne with my extruder and it came out nice. mine had those ridges so it is specifically penne rigate that I made. I then cooked it after it was dry and it was al dente in the same amount of time as mostaccioli noodles. I made some baked mostaccioli with it and it was good. images.media-allrecipes.com/userphotos/250x250/01/07/05/…
05:43
I thought "The whole wheat pizza was good, The whole wheat pasta is good, why not combine them?" and so I also made a pasta salad with pizza toppings. With some of the fruits and veggies I harvest I carefully take the seeds out and use the rest of it as compost. I then plant these seeds the next time spring comes

2 hours later…
07:56
@jolenealaska I understand that's the way it's meant to be done but I have a hard time thinking about eating fat like that. I'm a pretty open minded eater but I'd have to be eased into that one.
@Jolenealaska at last, something we disagree on
I hate fatty pork, I hate pork belly
08:13
Id rather eat a stick of butter.
likewise
pork belly is either tough, stringy or mushy
@rumtscho Belated good night. :-)
09:01
@PrestonFitzgerald Are pork buns fatty?
not generally
depends on what cut of pork you use
@ElendilTheTall ok

4 hours later…
12:54
@ElendilTheTall Very disappointing
I was thinking of buying a fashion dress for your wedding
Bang
Or dang it, even

2 hours later…
14:26
My puff pastry is in the fridge for half an hour
cries of excitement

1 hour later…
15:54
@Gigili Mrs The Tall might have something to say about that
16:22
@ElendilTheTall I owe you an apology then, I thought you were single.
Eh, no apologies necessary, I assure you :)
Hey @ElendilTheTall, speaking of Mrs Tall, when is the next tiny-tall expected?
Hi cerby
16:37
And, more importantly, how does it fit?
Is it rolled up?
rolled up <grin>
@Cerberus I think it's more of a 'just add water^Wmilk' thing, it expands when you do that.
Hehe.
I see!
mystery solved
@derobert What do you think of Lollipop, so far?
16:49
@Cerberus I prefer the ones with tootsie rolls inside, much tastier than the ones with LiIon batteries inside.
Really?
I think Rummy will disagree.
Tootsie rolls short-circuit her.
Not that I have ever seen one.
But I see it is a kind of candy.
@Cerberus Oh? I'd never heard this. How did a chewy chocolate-ish candy short-circuit her?
I imagine you were talking about insertion when you mentioned "tastier".
Besides, I think you could grow on neither.
@Cerberus Add some water and it'll be fine!
"How many licks does it take to get to the Tootsie Roll center of a Tootsie Pop?" uproxx.com/webculture/2013/07/… - A bit of silliness Meh, the video is gone. It was cute.
16:54
@Cerberus I'm not sure what that lines means. Probably, I don't want to know...
@derobert Really? What nutrients do you require anyway?
@Cerberus chocolate?
@derobert Well, I would ingest it.
BRB
@Cerberus Anyway, a serious answer: reports are it has nice features. Don't have it yet.
@Jolenealaska hehe
17:00
So is your torte out of the oven yet? Did you make puff pastry per the recipe that I linked to earlier?
@Gigili
Wait wait wait making puff pastry? I've always heard that's not worth the effort.
We tried to tell her that.
But I think she said that the frozen wasn't available to her.
We also discussed "rough pastry" as an alternative. I'm not sure which route she went, so I'm asking.
17:17
The puff pastry demonstrated in the video attached to the recipe for Tourte Milanese does make real puff pastry look like it's at least doable by mere mortals.
I still swear by Pepperidge Farm, I think Sara Lee does it too.
I'm cool with cheating when it comes to stuff that takes all day and is probably better frozen anyway.
@derobert OK I agree. The only thing that may bother me is the Knox integration.
But I haven't read today's news yet.
@Cerberus the personal/work thing?
Yes.
But it means trying to lock down parts of the system and setting a "counter" when you unlock it, or something.
Well, if its something you can turn on/off easily, and it just protects your personal data from your work apps and vice versa, that's a good thing.
17:38
Yes. If.
But I think it is also intended to prevent you from accessing your work part in some ways.
And it is trying to void your warranty by means of the counter, I read somewhere.
@Cerberus I think that's just Samsung.
I'm waiting to hear if the Nexus line continues...
Though for phones at least, if they stop the Nexus line, there is the 1+1.
@derobert Could be...
@derobert And Motorola, and many devices that are only six months old.
The One+One definitely hits the right price point. Some Moto phones do, too.
Sure!
The only requirement I have for my next phone is 2+ GB of RAM.
I am happy with everything else about my phone. Except the battery, but I can live with that.
And I'd love unbreakable glass.
And an Ara.
Yeah, I'd happily take an extra few mm thickness on the Nexus 5 for a bigger battery.
17:46
Ello ello
Hi @Gigili, so tell us more about the puff pastry. Did you actually make real puff pastry?
@Jolenealaska Honestly, It took me 3 hours to make the dough. When it was finished, I wasn't really in the mood for torte, so I cheated and the layers are Gouda cheese and Gouda cheese and some Gouda cheese
@derobert I'll also happily take a few mm thickness in exchange for more energy, like...cheese or chocolate.
@Jolenealaska Yep! But I guess I made some tiny mistakes during the process
@Gigili So you've made Gouda en Croute! I bet it will be yummy. I dunno about mistakes, is it out of the oven yet?
For future reference, if you ever want to make puff pastry again, it freezes beautifully. You can freeze it when you're done making it, then just leave it in the fridge for a day and night before you go to use it.
17:56
Got it, thanks.
Here you go
As a matter of fact, that's what I would recommend you do with the leftover butterless dough you have. Go ahead and incorporate the butter (you can wait a day or two with the dough tightly wrapped in the fridge). Having puff pastry in the freezer is a lovely thing.
Is that yours?
YES!
How is it?
Well that looks great! That's just what puff pastry should look like! See? I told you so :)
Hat's off milady! Very nice. I've never actually made puff pastry, so it's lovely to see that it really can be done at home by a mere mortal.
Assuming of course, that you are a mere mortal.
I've learned assumptions can be tricky with you.
Your comment on main says it just tastes of butter though, so you don't care for it?
It's supposed to be buttery but it shouldn't taste or feel nearly as fatty as it is.
18:09
@Jolenealaska It is buttery
Is it too buttery for your liking?
Umm, not really but it could be much better with the real fillings
I've eaten puff pastry once a year ago, it's a new taste
Perhaps that's why I don't like it very much
But it was exciting
It might be worth a Q&A on main, especially since you have the leftover dough without butter. Something along the lines of "Can I make puff pastry with half the butter?" The responses you get could be informative, and then if you post an answer based on your experience, you would teach us all something.
The main mistake I've made was that I forgot to put it in the fridge twice or thrice
I only put it there for half an hour once
Cold is very important to the process, from what I understand. That could be why it feels oilier (if I'm reading you right) than perhaps it should.
18:16
and for 10 minutes during the rolling and folding process
@Jolenealaska Yes, I agree
@Jolenealaska I'll do that.
That was a whole new experience, I liked it =)
Yep, that is what I love about cooking. There is always something to try that you have never done.

1 hour later…
19:42
Speaking of which. I'm making some impromptu fridge pickles right now. Celery, carrots, and onions.
Something simple that is just never done before.
I have now made some penne with my extruder and it came out nice. mine had those ridges so it is specifically penne rigate that I made. I then cooked it after it was dry and it was al dente in the same amount of time as mostaccioli noodles. I made some baked mostaccioli with it and it was good.

1 hour later…
21:06
@Cerberus Apparently, if I really want to, I can install Android 5.0 now.

1 hour later…
22:34
@caters Having a garden is nice, but it requires lots of knowledge. For example, you need to know which plants should be started from a seed and which shouldn't.
22:54
Guys, help me out with something. I know that wheat protein isn't all gliadin and glutenin (the proteins that give dough it's stickiness and elasticity and together create gluten), but high protein wheat flours are also generally considered "high gluten".
Except when they're not, apparently. I am in possession of a flour that is very, very high protein (16%) but also claims to be low gluten.
How can I go about testing the gluten strength of a particular flour relative to known quantities? (I have bread flour, AP flour and cake flour to play with)
Good question.
I bet there's some "old bakers trick" you could employ @jolenealaska. We just need to find an old baker and trick them.
@caters I've never been a fan of the texture of whole wheat pasta. Often it seems there's a certain graininess that I don't find to be pleasant. Was your penne grainy?
The real baker I know is young, and my "tricks" wouldn't work.
23:10
Not even the naked baking?
Especially not that.

You know you can put pictures like that in your message, right? Without needing to upload to the net.
23:18
Not from the mobile site :(
Ah
Who do we know here are expert bakers? I can think of Sourd'oh, rfusca and derobert. Anyone else?
@Sourd'oh, are you around? I'm trying to find an answer to a bread question.
I feel like @rumtscho is kind of a baking wiz, non?
I guess you could always find a way to form it into a Q&A
23:35
It's a Q&A idea that has me playing. Yeah, rummi might be able to help too.
Dunno if I spelled that name right. No autocomplete on the mobile site either
What name, rumtscho? That's right.
@derobert Ohh that would be cool!
Of course I wouldn't do it either...but still.
