Should I wash beef and pork? Especially if they've been dropped on the ground or something kinda dirty.

@JohnZhau You could; then make sure to dry them off properly.
But, if you're going to heat the meat anyway, it matters little.
I'm assuming you live in a place where dangerous contagious diseases like cholera are not praevalent.
