@Tetsujin Just a point of interest here. We JUST had a case locally. He home-canned salmon (improperly), it smelled and tasted bad, and he ate it anyway. He barely survived. Shades of Darwin

@Jolenealaska That may be another factor. Home canning is very much a US thing. No-one else really does it. It's quite hard to even find the equipment in the UK, you have to import it usually.

And home canning is becoming a bit of a trend again.
Supermarkets will offer jam and canning equipment throughout summer and autumn.
Ten, fifteen years ago, it was really tough to even find jars, except the twist-off jam jars.
@Jolenealaska why? Remember the safe vs. spoilt. Totally up to you to drive without a seatbelt, figuratively speaking.

Indeed, I have never heard of anyone who cans here.
Making food in those glass weck pots, however, is quite popular.
