12:31 AM
@rfusca Noted!
@sourd'oh Also noted!

Making 'magic cake' tonight - it's a thin batter that you bake and it comes out in three layers.

Wow!
Custard and sponge cake from the same batter?
Very interesting. And now I'm hungry yet again...

1:12 AM
@Cerberus lol you are on a cooking site

I'm so stupid!

@Cerberus we'll see how it comes out, its almost out of the oven, but has to cool for several hours

Wow, that's long.
For the custard to set?

@Cerberus i would assume so - its generally a fragile thing right out of the oven

Ah OK.

1:22 AM
Well cakes out of the oven....now the marathon cooling
i hate waiting

We all do!

"I love waiting!" - Said no one....ever.

I was going to say something like that!
I hate waiting. But it's OK provided that I have something to do.

1:40 AM
@Cerberus You can perfect your pumpkin tart. You must be tired of lemon, and can expand your repetoire.

My pumpkin tart?
I'm far from tired of lemon!

i just don't enjoy lemon much as a flavor

@Cerberus Pumpkin is delicous. You need variety.

@rfusca Haha you're crazy!
@SAJ14SAJ But it's completely different!

@rfusca I mistrust the magic cake, so you will have to report the outcome. I suspect none of the layers an can be optimal to purpose, compered to putting custard on a cake base or whatever.
@Cerberus that is kind of the point of variety :-)
You could do sweet potato if you want, but I am a pumpkin partisan.

1:48 AM
@SAJ14SAJ oh, sure, I doubt its 'optimal' but its also SUPER easy

@rfusca Easy is good, sure.

so far it looks good. the top layer looks...normal cakey

I even admit to having BOUGHT a pumpkin pie two weeks ago.
The problem is, I only ate 1/3 of it.

just leave

@rfusca ??

1:51 AM
@SAJ14SAJ lol I mean, come on...buying a pumpkin pie
you're killing me
;)

@rfusca But it was easy!
And the pie was credible, but I can only eat so much so fast.

lol
i've got a wife a two kids - I don't have to worry about pie/cake not getting eaten

The easiest dessert I make is my modification of Cook's Illustrated double chocolate pudding. I modded the recipe to take out all of their wierd extra labor stuff, and make it work from a single carton of half and half.
ITs put it in the pot, bring to a simmer, cool.
That is easy.

@SAJ14SAJ I would probably go for more traditional recipes, like...chocolate cake.

@rfusca Not all wives admit to eating pie.

1:53 AM
@SAJ14SAJ the ones worth having do ;)

@Cerberus I don't know a recipe that easy for cake, although some come close.
@rfusca :-)
I like a nice sheet cake, no fussing with layers or anything, or a bundt cake. Chocolate bundt cake. MMMM. Or pumpkin.

How easy?

I like pumpkin.
ONe bowl and put in the pan easy.
No creaming.

i have a habit of under baking bundt cakes and then discovering it too late when I try to turn it out of the pan

You can turn those into trifle or whatever.
I find the smell test combined with the toothpick test is quite reeliable, but then I have experience, so I don't know how to not do it any more.
Rumballs or similar are another way to salve a situation like that. It never has to be wasted :-)
How old are the children?

1:56 AM
@SAJ14SAJ ya, I make lots of cake, just not bundt, so I just forget it has to bake much longer
@SAJ14SAJ 5 and nearly 2

@rfusca So sleep is not a part of your life? :-)

@SAJ14SAJ I remember sleep once

They are so cute.

thanks

Do they get along? Has she discovered the big sisterly duty to torment her brother?

1:58 AM
@SAJ14SAJ he's just discovering that. its a mix of copying sister and tormenting sister right now
what about you? family, kids?

No I am single, I have two kitties now.

ic

They are about 13 and 17
I am on a different computer than usual or I would be forcing cat pictures on you.

@rfusca Awww.

@SAJ14SAJ lol
@SAJ14SAJ old for cats!
@Cerberus thanks :)

2:00 AM
@SAJ14SAJ Good riposte.

Yeah, the 17 year oild's brother passed about a year ago. I still miss him.
@Cerberus Wasn't meant that way :-)

Heh.

He was my emergency backup kitty in my feline architecture. Now I run without backup :-(

aww, sorry :(

Yeah... well...
I don't see any doggies in your picture either.
OR ferrets.
Or things more exotic and less pet like.

2:03 AM
well..one sec
our dog

I am sorry but that is not a flattering picture. :-) What is his name?

lol
Roo
my wife with one of our two rats

Why do you have pet rats? And why has roo not deratted them?

We keep them separate. We have pet rats because they're fun - very smart.
they do drive Roo nuts

I would never think of rats as a pet, somehow.
THey are rodents.
And my pets would hunt them.

2:08 AM
they're excellent pets. much better than a hamster

I never understood the hamster thing really.

shrug

What do they do?

we had dwarf puffer fish for awhile, they're fun...for fish
@SAJ14SAJ the rats?

I think fish are more ornaments than pets....
Yes, the rats. You said they are smart, how do you knoiw?
Tbe one got a 1050 on its SATs? :-) That isn't far about average, but pretty good for a rat :-)

2:09 AM
you can train them to fetch, ride on your shoulder, come by name, jump through hoops, etc

They know their names?

yes

Now I am imagining giant habiiraiils and a rat powered snack delivery service.
Nothing much larger than a cookie, though.
Do they chew up your house?

@SAJ14SAJ lol
@SAJ14SAJ no, we don't let them run around like that

2:28 AM
i'm gonna have to cut into the cake early...but I think it will be ok, its been on a cooling rack with a fan blowing over it
Its very mild in flavor

In teresting... and the texture?

pretty good actually
its a very light, creamy custard, a crumbly cake on top
the bottom layer is the only thing thats a lil' different

It really made a custard layer?

it really did

who woulda thunk it. Children and dog approve?

2:40 AM
wife approves, kids are in bed
wife had 2
its a very light dessert really. It doesn't feel very heavy at all

I am quite surprised, I am skeptical on these things.

its odd how clearly the layers are
you can actually peel the cake layer off the custard layer - its that distinct
eating it, you'd swear it involved manually layering different components

Now all you need is a chocolate version.

oh, they have that
and if you put a light fruit on the bottom, supposedly it rises up and ends up between the custard and cake layer

That's...magical!
@SAJ14SAJ Sceptical of magic? Odd.

2:47 AM
@Cerberus its quite surprising

7 hours later…
9:57 AM
Hi :)

2 hours later…
11:52 AM
@Mien Boo!

Whaaaaaaaaaaaaaaaaaaaaaaa!
I indeed did not receive my Sansaire yet :(

12:41 PM
No fun

12:58 PM
Yes.
But what can I do about it?
Also, planning on making my first biryani this weekend :)

How will you console yourself?

The pic you showed some days ago looks too yummy.
@SAJ14SAJ Don't worry, we have a PS4 at home :P

Wow. I just got a new ps3 to play disgaea. My old one was dead dead dead

We never had a PS2 or 3.
We recently bought Rayman Legends :D Boy, is it fun!

You get bsnand Jerry's in Belgium?

1:15 PM
Some, but not a lot of flavours.
I think 6 flavours or so :)
Also, quite expensive :(
but worth it, once in a while :)

1:30 PM
I am surprised it is exported...

1 hour later…
2:52 PM
It's a big company.

3:03 PM
@Mien Ben and Jerry's? I don't think they are that big... plus, I guess I would be surprised at imported ice cream from France or Belgium; so why would you want to import ice cream from the US?

@SAJ14SAJ I don't know why, but we do import the US premium ice cream brands. Both B&J and Hagen D.
@rfusca your son has grown so much! Last time I saw (a picture of) him, he was lying in a banneton. The white-blonde hair is very cute.

@rumtscho His boy is a loaf?

And that cake looks very interesting, I am itching to try it.

Hi rummi

@SAJ14SAJ He isn't. But he was small enough to use one as a bed.

3:09 PM
hey

hello @SAJ14SAJ and @Mien

@rumtscho I added a cross-question link to your answer on low fat, since we had one that enumerated types of low fat cookies. Hope you don't mind.

@SAJ14SAJ of course not. I had forgotten this question, but it is indeed a very good link.

Are you over your angst?

By the way, I removed GdD's paragraph on health even before I saw your flag. He rolled it back. I left a message for the other mods to deal with it, because I didn't want to start an edit war.
@SAJ14SAJ I wouldn't call it angst, although it was certainly some kind of negative mood. I still haven't analyzed all emotions in it. But the good news is that so far, nothing bad has happened today, so I hope the streak of bad luck is over.
I also happened to give myself a major mood boost
Have been needing a tablet for some time, because there are many magazins I just can't read electronically in a convenient form
So I ordered a Nexus 10 and it arrived today

3:56 PM
@rumtscho I am glad you are feeling better. Cool! Are you enjoying your new toy?

@rumtscho Nice!
It's not available in Belgium :(

@Mien Did you mean not available? i wonder why not. Maybe it is something regulatory.

lol, that is what I meant, yes.
Don't think so, I guess it's from Google themselves.
The nexus 7 is available.

Google hates belgium?

:-(

4:05 PM
Maybe they just haven't made any german french dutch speaking models.

Apparently.

I am so hungry.... and I have to wait for lunch with a colleague.

@Mien I got it from Amazon.de, maybe they would ship to Belgium?
It was 300 euros on Amazon, 500 on Google
But I only got it on my way to work, so haven't played with it much yet
only started it and installed 2-3 magazine and newspaper applications which didn't work [well enough/at all] on the smartphone
@SAJ14SAJ No chocolate stash? I always have some chocolate and some pistachios in the drawer, and take small pieces in case of hunger spells.

@rumtscho That sounds expensive
@rumtscho I am in the office today, so I have no food stash. If it was a work at home day, I would have all kinds of food.

How much costs the Nexus 10 in the US? because it sounds to me like standard :)

4:18 PM
@SAJ14SAJ Electronics is generally more expensive here, with VAT and smaller markets. Nexus devices normally just use the same prices in dollars and euros, so when something is launched at 400 USD on Google.com, it is 400 Euro on Google.de

@rumtscho Ouchies.

But the price has not changed on Google since the tablet came out in 2012, and on the tablet market, this is a lot of time. I wouldn't have spent 500 Euros on the thing.
Else, 300 is extremely cheap for a retina display device. The low-dpi ones are much cheaper. But I am getting it especially for reading stuff which has been layouted for A4 in print and can't be reflowed. So I needed the high-dpi screen.

@rumtscho Thanks!
@rumtscho It was a very interesting cake
sorry...trying to multitask too much and brain just substituted words

So you recommend making it?
I haven't baked for what feels like ages.

Yup, I think so
especially if you don't like what are super sweet things

4:23 PM
@rfusca yes, this is a good point. I prefer moderate sweets. It is a character flaw when you grow up on the Balkans :)

lol yup

@rumtscho He is just leading you on... when you get attached, boom! Save yourself!

What cake is it?

shush! don't let them on my evil plan
@Mien magic cake

Ooh, I'm intrigued!

I've seen the pic but I cannot see what kind it is :P
ah thank you very much

one batter, three layers automagically

cool
sounds like my first cake

150 sugar to 115 flour + 500 milk? I doubt that it has hidden sugariness.

one batter, two layers :P
anyway, time for me to go home!
bye! and don't talk behind my back! I'll notice it

4:27 PM
@Mien ah yes, I've made the unintentional kind too. Mostly when I was trying to get the hang of genoise.

@rumtscho I'm saying that its not very sweet

I don't know that recipe is grams... not sure it is trustworthy :-)
So, about Mien....

Oi!
I'm still here! Please be patient :P

lol
@rumtscho I was just surprised at how distinct the layers were. I expected more transition.
I made pork chops last night with a brown sugar, coconut rum, soy sauce, garlic glaze - they were pretty good!

@rfusca oh, that sounds tasty

4:33 PM
it really was

@rfusca I wonder what the physics of it are... reading the recipe doesn't make you think it should do that.

@SAJ14SAJ Ya, when you make the batter, you realize that the density of the different components makes a lot of it happen
like all the egg foam ends up rising to the top right away

Hmmm.... the instructions make it sound fairly homogeneous.

its definitely not
you'd have to severely over mix in the egg whites to make it homogeneous
(which is apparently a common problem when people make it)
in general, people over fold egg whites
Should pose it as a Q on the site - why it becomes three layers

I was thinking about it....
Can I steal your picture?

4:46 PM
@SAJ14SAJ sure

Q: What is the science behind Magic Cake?

SAJ14SAJMagic Cake has a seemingly simple batter, that is mixed and baked as a single entity. (See link for the full recipe and method). When it is baked, it separates into three distinct layers: A dense bottom layer A custard middle layer A cakey top layer (Photo by Rfusca) What is the science ...

@SAJ14SAJ nice

@rfusca I wonder who will answer... I am one of our top baking science answerers, and I can only make some educated speculations. Maybe sour.
What do you think lukewarm means? I wish they had given a temperature. I would give it a yeast proofing temp like 110 F.

@SAJ14SAJ Mine was 100F because butter melts around 95.
And yes, I used a thermometer

Makes sense. Thermometer for the win.
This blogger added nuts...

5:00 PM
@SAJ14SAJ If you look at the site I posted, that person did one with fruit as well
ok, lunch time
leftovers!

She did a pumpkin version! Oh my!

5:19 PM
I switched from doing microwave dinners to leftovers for lunch awhile back now lunch time is like the best time of the day. I just always pack my lunch for the next day right after dinner.

Fun!
I am lucky enough to work at home three days a week, so I tend to order on office days.
I just ordered kung pao chicken, lo mein, and won ton soup.
I admit I only ordered the kung pao to see how well they do it.... something will be leftovers!

I work from home once or twice a week
Ordering out is just so $$

I get paid very, very well, and I am single.
So I don't worry about it.

Nice

Still, you live near Atlanta, which is a great food town. DC is not :-(
If I was near atlanta, I would be eating out so much.
I still remember this place off Roswell that made the most amazing pork burrito.

5:23 PM
I get paid well... But I have a family and my wife came with a boatload of school debt lol

And of course, margueritas the size of swiming pools at El Azteca, the only restaurant I have ever seen where there was one on Roswell, then another one right next door!
@rfusca i am sure that won't last forever.

Sigh ....close enough lol
But we're knocking it down

@rfusca Well, no kids or no debt... you have chosen :-)

so, I'm home. The data storm can start.

Indeed :) and I'm happy with it

5:31 PM
@SAJ14SAJ good question, but maybe you could have mentioned that you are looking for something deeper than "density" before somebody writes an essay about how egg white foam floats.
WTF Google!

@rumtscho Good adivse, although it is definitely more than that. Some of hte pictures on the web clearly show their is an edge effect to the layers, so heat matters too :-)
I tried googling it, not much good stuff in my first few minutes....

My tablet has connected to the Wi Fi at home without me giving it a password
which means that my phone must have shared it over my Google account (of course I used the same one for both devices)

Hi!

hi @Cerberus

When you go to settings > accounts > Google, tap on it, does it say "Wifi passwords" in the list of things to synchronise?

5:35 PM
While I agree that my phone should know my Wi Fi password, I am not so happy about its cloud backup knowing it.
@cerberus it lists the optins ÄMaps & LatitudeÄ, ÄSearchÄ, ÄLocation settingsÄ, ÄGoogle+Ä, ÄAdsÄ

My tablet automatically figured out my commute and suggested I leave early one day because of traffic
It was slightly scary

@rfusca Big Tablet is watching you!

@rumtscho No, tap on rummy@google.com in that menu.
It is a very unclear menu, I agree.
On my phone, it doesn't say Wifi passwords, but perhaps you have a different version.

I donöt see Passwords
maybe it is part of App data, that is enabled
oh, yes, version

Hmm.

5:40 PM
I have to install the updates too, this is why I wanted to be in the home network in the first place

Ah.

I activated it while tethered to the UMTS data of the phone

So I wonder how it synchronises your passwords, then. Oh, yes, could be part of app data?

installed 3 apps, 10-15 MB each
and downloaded one 50 MB PDF file
and my phone shows 450 MB usage today

Huh.
Which programs have used those data?

5:41 PM
good thing I didn't install updates too
@Cerberus I don't know. The phone's measurement shows the WiFi hotspot, I assume. I don't think the tablet has measurement for WiFi data.

Ah OK.
I get it now, you used your tablet, which was tethered to your phone.
Is it an Android tablet? Then you can turn on the Wifi tab in "data usage".
Go to the "data usage" graph, tap on the menu button there.

Google services 258 MB, Chrome 168 MB, Google Play music 133 MB
I hadn't intended to sync anything from Google Play music, I had forgotten that I have had synced something from it at all
the Google services is obvious, because I also installed an update in the meantime
but I wonder how visiting 2-3 sites can have created 168 MB of usage in chrome

@rumtscho yes, that's normally part of cloud backup
@Cerberus Its not listed as something sync'd on my phone...
@Cerberus its under Settings -> Personal -> Backup & reset ->
