Sounds like a lot of food. Mmm.

7 hours later…
07:34
@rumtscho I did it! :)
I am very impressed with my bad-ass self!
@ElendilTheTall Lookie, lookie what I did! :)
08:14
@jolenealaska b-e-a-utiful!
And the croissants aren't bad either ;)
They sure are! :)
This time I even get to the picture on main since it relates to gigili's (who we haven't seen in a while) question about puff pastry.
I am editing my answer to include it right this second.
I even left the picture full-sized cause it's so pretty.
08:31
awesome
I just sent that picture to my dad!
08:49
Clean up on aisle D!
hheee:)
I am also indulging in some French baking today - baguettes
If they turn out as well as those croissants I will post un photo
Actually they will have to be demi baguettes to fit in my ovens, but you get the idea
I've shipped out all my kitchen gear :(
no baking for me
That sounds good too. I was considering baguettes when the conversation turned to croissants.
not that there was much to start with
08:51
Not with that attitude
I'm tickled that I could find an excuse to post the picture on main. See? I really CAN cook!
I'm sure nobody doubts that!
I had my doubts....
runs away
I knew you were going to say that!
09:02
I made a few Pain au Chocolat too, but I pulled them out of the oven I realized that I should have used about three times as much chocolate. I froze a few unbaked croissants, so when I defrost them I'll fill them with chocolate.
@TomW Ha, I'd never seen that, but that voice is sure unmistakable!
:D
I'm apparently the only person in the world that likes it
I think the haters are aggrieved comic book nerds who insist it's unfaithful, though. I've never read them so I wouldn't know.
Is he a superhero or a futuristic cop?
cop
oh man, watch it
detach your brain beforehand
What's it called?
Judge Dredd
the old one, not the new one
Yeah. It got widely panned
the mood is similar to Robocop, if you've seen that
so cheesy as hell and really freakin' dumb, but fun
I didn't see Robocop either, but at least I've heard of that one.
09:23
@ElendilTheTall Does the OP get notified if an answer gets edited? I see that Gigili has been on main as recently as yesterday, and I want to be sure she sees that edit.
I can't remember if I've ever seen a notification like that or not.
@Mien I thought of you when I saw this. It looks good, I've got a chicken in the freezer, I think I'm going to try this: saveur.com/article/Recipes/…
10:17
OMG!
This is beef chuck!
A notoriously tough cut unless long braised.
what was it supposed to be?
I sous vide it at 131F.
My book recommends 48-60 hours.
lean looks good, fat doesn't
I was dying to try it, so I pulled that one at 30 hours, I'm going to let the other go until tomorrow.
That's just 'cause the fat is thick on chuck, it tastes great.
I gave it a quick sear in a NASA hot cast iron pan (30 seconds per side)
I swear, blindfolded, I would have guessed it to be rib-eye.
that's 30 seconds?
Wow.
10:23
like I said...HOT!
About 500C
notice no grey border at all?
I could cut this with a butter knife.
as a matter of fact, I just did. In 3 strokes.
From now on I can have steak whenever I want, 'cause chuck is cheap! On sale, i can get it for a third of the price of rib eye.
Good GOD that's good!
This is as good as any steak I've ever had.
awesome
I thought Dad was going to shit himself about the croissants, but wow, wait until he sees this!
@ElendilTheTall Check this out!!! (look up)
I saw a sous vide machine on sale the other day
did not buy
And no need to rest, I cut it 5 seconds after I pulled it from the pan.
opened packaging
10:35
I got this one:
Apparently there's a new Anova for the same price or even less, but Anova is sold out until sometime in January.
A lot more expensive, and takes up more space.
yep
You can use a lot bigger container with the Anova too.
I was surprised how heavy it is. It's super easy. Touch screen, pick C or F (goes to tenths in C, whole numbers in F) set the number by touching each digit 0-9 times, then on. You can set the timer if you want. That's it. There's a minimum and maximum water level marked on the side.
The clamp is sturdy, no way to knock it over accidentally.
are you being paid by them or? :P
10:45
My guess is that just about everyone that has gotten one of these has sounded just like me for a few days.
:)
It was just a couple of years ago that you couldn't touch souse vide for less than $700.
This costs less than a Le Creuset Dutch oven!
It's funny, it's going about 10 feet from me. The machine itself barely makes any noise, but the water moving is white noise. I might be able to set it up in my bedroom and stop wearing earplugs!
I think the discomfort of having something stuffed in my ears would override any benefit of earplugs, personally
I have one brand that I like and that are perfectly comfortable. All others hurt my ears.
The New Anova is $20 less with upgrades that that a lot of people would like, but would make no difference to me:
one of these days maybe I'll try it
currently sitting here stewing in my anger at stupid people in call centres making life difficult for me
11:05
terminal hold?
not even attempted to actually call them yet today
so the plan was to camp out monday at my new place and wait for i) fridge delivery and ii) gas engineer
but I stupidly decided that the finance deal on the fridge was a good idea, and it hasn't gone straight through automatically like I expected it to and have had no response, and if nobody's in at the weekend there's no way they'll ship it for monday
If that's not going to be monday, I need to know when to book the gas engineer for
I hate calling people because they usually don't know anything
one of those situations where everything is held up by everything else
I hate calling people just cause I hate the phone.
that too
If I don't want to the person, then I really hate the phone!
If I call the appliance people, cancel that and just pay directly, I expect I'll get two bills, if not two fridges
11:10
My ring tone is Do You Here the People Sing from Les Miserables. That's the only thing that has kept me from flushing the damn thing.
Yep!
I'm trying to decide which is the least painful and confusing route, and there isn't one
Factoring in that people who work in call centres are usually stupid, and CRM systems are usually rubbish
I'd say you're correct on both counts. The one exception I've found is Amazon. They're doing something right, cause every time I've called them (maybe 8 times) they have quickly and pleasantly solved whatever problem I was having.
it's news to me that you can call amazon
Yep. Actually you tell them that you want them to call you, either right away or whatever time you want. If you say right away, the phone rings immediately.
When I had had my Kindle for about a month, I broke it by stepping on it. They Fed Exed me a new one, I received it the next day. I put the old one in the box and shipped it back to them. They paid the shipping both ways, didn't charge me a dime.
well I never
11:24
It took 1 phone call and about 1 minute.
charged my kindle yesterday for the first time in about two years
At best I was hoping for a discount on a new one.
took so long to show any activity I'd assumed it was dead for a while
I use mine every day. My new sous vide cookbook is on it, and I play scrabble on it all the time. I don't think I've read a book with pages in two years.
I have a fair few professional books on there
usually use the chrome app or my phone though
11:32
I would say that my Kindle is in my top 5 prized possessions.
One of my favorite things is that if somebody recommends a book, I can have the book in my possession in about 2 minutes. Of course you can do that with your apps too, but I think the Kindle was first.
I would love for other ebook retailers to be able to link up properly with the kindle library
a lot of the stuff I buy is in deals from IT book vendors that would either not be on Amazon or be unreasonably expensive, and they let you download them directly in as many different formats as you can think of, but getting them onto a kindle breaks the suspension of disbelief
My circulator just turned off. After 32 hours, the water level had reached the minimum line. I put about 6 cups of cold water in. After restarting, the temp rose about 3 degrees a minute.
That surprises me, I'd think the kindle format would be pretty much the default.
there's Apple ebooks, they're a different format
and there's another open format, I can't remember which is which
and PDF
you can just send files to a kindle by email, but it's not as seamless as the library sync
11:58
I'm writing another email to Dad, thanking him for the circulator. When I finish I'm going to post it here, 'cause it's all about how cool the toy is.
12:51
Damn, these things are like a nuclear bomb of sugar greggs.co.uk/news/introducing-the-greggsnut
just had a caramel pecan version
I don't eat sugary stuff very often, and something that sweet sometimes makes me nauseous. This is one of those times
They look it!
I used to drink Mountain Dew, like a 6-pack a shift. I quit soda cold-turkey a few years ago. I tasted one not long ago and it was like drinking pancake syrup.
Eesh
I've heard U.S. soft drinks are usually made with HFCS and they're sicklier than those made with cane sugar
buddy who went there a few times wasn't impressed with the coke
one Caramel Pecan Greggsnut has 437 calories.
:D
I wonder whether that will hold the hunger until dinner. Probably not.
I tried to find out how much sugar, but I couldn't find it.
13:01
My problem with calories is that there aren't enough of them
Yeah, most sodas here are HFCS, but I don't think it's really any worse than sugar.
I think it's like MSG, much ado about nothing.
NOTHING keeps me satisfied until the next meal. I can eat pretty much anything in quantities that are quite frankly uncomfortable, and I'll still be so hungry I can't concentrate on anything else by the next mealtime. It's pretty irritating, actually
I wish I had that relationship with calories.
I can totally forget to eat some days, I don't realize it until the next day.
It's at the point that I'm wondering whether I have some kind of metabolic oddity that means I'm not actually getting those calories, because I should be obese for the amount I eat, never mind the beer I drink
The only thing I know of that can do that is an overactive thyroid.
13:04
Um.
I just looked up the symptoms
Mine is underactive, I take a pill once a day of thyroid hormone.
There are a couple. Very mild, mostly.
Yep, of all things that can be wrong with a body, an out of whack thyroid is pretty minor.
Tapeworm?
Forgot about that one!
13:06
Wouldn't rule it out!
How do you eat your steak?
@ElendilTheTall no campylobacter making itself known so far btw, thanks for your concern
There's a 5 day incubation period
Speaking of steak, did you see my picture, Tall?
This time Thursday you could well be losing weight fast, let alone putting it on
Picture won't load on mobile.
But I trust you implicitly.
13:09
During the 50s, I think, someone was selling tapeworm eggs as a diet thing.
Bummer, well, you can see it later. It's cool, no grey border at all, just a perfect medium rare and beef chuck so tender I could cut it with a fork.
I'm writing an email right now telling my dad. Aisle D is going to need another cleaning.
apparently black walnut (possibly the shells) and certain herbs are meant to rid one of tapeworms. I'd better get eating those, just in case
Awesome steak for the price of hamburger! You know, consider that. The circulator could pay for itself pretty quickly. The new one is only $179.
@TomW Or you could, y'know, go to a doctor...
And Amazon has a vacuum sealer for $39. Unless it's coming in another shipment, Dad didn't get me that. The Ziplocs leaked on my steak, but it didn't seem to hurt anything.
I could tell you how to tell if you have a tapeworm, but it's kind of gross to say.
If I go to a doctor claiming I've got a tapeworm I think I'd be shown the door
13:19
not really, they do happen
I said I wasn't fat. I didn't say I had alarming weight loss or inability to put on weight
I know, you know you don't have a tapeworm.
You could have an overactive thyroid though. That's not something a doctor would normally test for without suspecting it. It's a cheap and easy blood test.
It's pretty common too, although underactive is even more common.
You don't have to go claiming you have a tapeworm, go and tell them you seem to be unable to gain weight
That's what you pay your national insurance for
Useless trivia for the day: Dogs commonly have underactive thyroids, overactive is very rare. Cats commonly have overactive thyroids, underactive is very rare.
life be glitchy
and as for the human knee...
Broken by design.
13:34
Yes....Proof that evolution is a tinkerer, not an engineer. (not my line, but I like it)
That reminds me @ElendilTheTall , did you watch any of those "True Facts" videos?
14:06
OOH I just got an email from Amazon, the seal-a-meal is on sale for $30, and the rolls are on sale too. Too bad I have no money until the end of the month.
14:17
@Jolenealaska no, 'fraid not
Baguettes!
pre-shaping
shaped and nestling in the couch
wow, done already?!
Looks yummy!
not the best crumb ever, but nutty and crisp
When you can, you really should watch at least the Leaf-Mimic Katydid (you'll see why it made me think of you) and the Marsupial one (funny, funny). The videos are actually a bit educational, but mostly they are hysterical.
The baguettes look awesome.
That's going to be my next project I think. Did you use an online recipe?
14:32
I used the one from the Look Inside! view of Hamelman's Bread book on Amazon :)
That's convenient!
Got it. 0.13oz yeast.
3.7g
Would you recommend the recipe?
Ah, it gives teaspoons, my gram scale can stay in the drawer.
Does that say 1/8 tsp or 1/4 tsp for the pre-ferment?
14:52
It's fine, yes. Watch the videos online too
Search hamelman on YouTube
15:19
1/8
It stays at room temperature for 12 hours so it only needs a tiny amount of yeast
I watched the first three or four of the videos when you posted the link. I'll watch the rest later today.
4th one is perhaps the most important. Gotta get tension when you shape or you get paddles rather than tubes
Ah, so I watched 3, cause I didn't see that.
15:38
first for everything: I bought paint
Hey hey! Paint! You'll probably get some plumbing experience your new purchase too. :)
I'm not generally crazy about turkey, but this looks really good. I think this will be what I do next Thanksgiving:
mmm
16:03
I had a good strategy. I walked around for a long time looking thoughtful, reading labels, consulting my list and looking at my phone. That way it looks as though whatever I'm doing is my plan.
:)
I have spent the last 3 hours answering questions on Amazon about the sous vide unit.
Hmmm...It's rumored that Bruce Jenner is going to become a woman.
who?
William Bruce Jenner (born October 28, 1949) is a former U.S. track and field athlete and current motivational speaker, television personality, and businessman. He won the gold medal in the decathlon at the 1976 Summer Olympics held in Montreal. Following his Olympic victory and the related recognition, his professional career led to new success in television. By 1981, he had starred in several made-for-TV movies and was Erik Estrada's replacement briefly on the top-rated TV series CHiPs. In 1991, he married Kris Jenner (née Houghton, previously Kardashian). Since the 2007 debut of the cabl...
He's very famous here.
I'm glad I didn't know
16:18
He's on a reality show (which I have never seen), if it's true, ratings will go off the charts.
I'm afraid I'm aware of who the Kardashians are
much as that galls me
I'm aware, but I couldn't pick one out a line up.
I could pick out Jenner though.
Hmmm, looking at Google, it appears that the rumors are true.
He had surgery a year ago to remove (or make invisible, I guess) his Adam's Apple, and lots of articles report about the sex change.
Wow...born in 1949. Pretty late in life for this.
It strikes me as odd that someone of that age would 'discover' that about themselves. That they wanted to be the other gender, I mean
yeah, my thoughts exactly
Just recently pictures of him in drag were in the tabloids (seen while in the grocery line, I don't read that nonsense), and I was surprised at that. A sex change is waaaay unexpected.
I even guessed that he was dressed for Halloween (for the nanoseconds I thought about it)
Bruce Jenner is a transsexual (or whatever transsexuals are called before the surgery), and it appears that Bill Cosby is a rapist. Heck of a month for American celebrities.
17:05
hmmm
I had moved on to other things, that was in my email as "breaking news".
For a second there I thought you'd given the lie to your assertion that you resembled Catherine Zeta-Jones @Jolenealaska
HA!
I'm glad you're here, I've got a question for you.
I keep getting this:
but when I hit check for updates, nothing comes up.
And it says it won't activate, cause it's vulnerable. I tell it to run anyway and it seems normal. Until it pops up again, which is every time there's a video on the page I am on.
Also, is this correct? I know that the vanilla isn't included, but is there anything else?
0
A: Can I substitute 70% chocolate for unsweetened chocolate in a cake recipe?

Bob GilchristCocoa butter is a cocoa solid. 70% chocolate means that 30% is sugar. The 70 % is made up of cocoa and cocoa butter (and usually a bit of vanilla).

@ElendilTheTall One more question. Look at the comments here, do you agree that the comment is rude?
5
Q: Impact of using egg yolks vs whites in a spaghetti dish?

DfowjI'm making a dish that calls for several egg yolks and 1 full egg (all scrambled together) to be poured over hot spaghetti and cooked salt pork (to cook the egg), and I'm wondering how much of a difference using yolks vs using whites makes. If I could use the entire egg, I would be able to use l...

17:33
@jolenealaska OK. Just download Adobe Flash player from the Adobe site afresh.
OK, I'll do that.
The percentage of chocolate refers to the total percentage of products derived from the cocoa bean, so yes, cocoa butter and cocoa solids.
Yes, but anything else but sugar and maybe vanilla in the remaining percentage?
Sometimes soy lecithin I believe
As an emulsifier
Milk, in milk chocolate
Ah yes, I've seen that in some. I thought of milk, but I've never seen milk chocolate labeled as some percentage of cacao, so I mentally dismissed it.
17:41
As for the comment... A little rude, and somewhat useless
p.s. who hasn't heard of spaghetti carbonara?
I don't know why it really bugged me, but it did.
I had that thought too!
It bugged me enough to say something, I don't know....maybe just because I've hated getting that "let me Google that for you" thing.
I'm going to comment on that chocolate question that it is close, but not completely correct.
18:02
@Jolenealaska: My comment was in reference to the question as it was originally posted in which it was spelled "yokes". I don't believe I had edit rights at the time so I left the comment. I shouldn't have been so cryptic. – Dennis Williamson 4 mins ago
@DennisWilliamson I'm glad you responded. I'll delete my comment. – Jolenealaska 1 min ago
18:18
This is cute :)

4 hours later…
22:05
Pet Peeve of the Day: when people use the word 'text' (verb) when they mean 'texted'. 'I text my friend yesterday'. No, you TEXTED him. You wouldn't say 'I call my friend yesterday'. It's something to do with how - xt sort of sounds like an - ed ending. Like texed. Nnnggg.
Ouch.
Unless you are talking about speech, that is awful.
In speech, it's not so strange to have -consonant-t-ed sound like -consonant-t.
22:25
I must admit I say that
but then I bet at least one of the persons here present says "co-worker"

1 hour later…
23:34
@TomW Possibly. I avoid the word myself, but why do you dislike it?
I always find "colleague" to sound a little stuffy/pretentious
I usually go with coworker
