@rumtscho- did the first tofu experiments. I didn't like them.
I used equal weights of coagulants which I think may have been an unfair test as recipes call for various concentrations.
I'm going to try it again with using ratios from actual recipes.
The experiment as it was was still interesting. The texture and flavor varied pretty widely. The amount of water that pressed out was similar, however.
Besides the before and after weight of the curd and whey everything else was painfully subjective- my opinion of the texture and flavor and how well the curd held together. Not as scientific as I would like but still useful for a cooking blog.

Your subjective measurements are good
But I would ask you to keep a "lab diary"
Just a sheet of paper or a word document where you note what you used for each batch, and what were the most important qualities you noticed
Because I have noticed by myself that writing a post without this info is hard (when trying to do it from memory only)
Also, you know that we like pretty pictures, so don't hesitate to take lots of them :)

@rumtscho I took tons of pictures but I can't guarantee their prettiness. The lighting is not the best on my kitchen counter.
 
@Sobachatina You can put some results under a window for a shot or two - works wonders.
 
Indeed. I feel like I have a decent idea how to create a reasonable photo. But all these experiments are fairly time sensitive and I didn't plan ahead for the pictures.
Next time I'll do my setup next to a window in advance.

If you can't get all the pics nice, make ones of the intermediate stages as documentation - we can show these small - and a few big nicely lit ones of the end results, such a mix works too.

That was my plan as well.
The intermediary stages are when I have to move quickly.
 
Once you have a good, even lighting on the pictures, and no ugly clutter in the background, I can do some postprocessing for you - cropping them closer, making the colors brighter. It is the bad light and the sink full of moldy dishes which are hard to work around.

And I think my wife would kill me if 1- we had moldy dishes in the sink and then 2- I posted a picture of it online.

You might consider using google docs for your drafts.

There is an "insert comment" function that attaches the comment, with the name of the commenter, to the particular block of text.
@derobert Does libreOffice have an online sharing component? I thought it was just the fork of openoffice.

OK, I have always purchased the best display I can afford, but there was a time this was a 15" CRT.
 
I used to have a 13" CRT.
Though the worst ones were the ones at school, which were configured by the blind.
Or at least I assume so, as I don't see how anyone who isn't blind can use a 60Hz CRT
 
I got my first computer in 1999, by then a 15" CRT was 250 Eur.
At university, there were a few PCs with some ancient Matrox graphic cards
 
Ah, my first computer (well, my parents actually, but I used it pretty much all the time) was '94 or '95, not sure exactly.

They were far below 60 Hz
I saw the flickering all the time.
But I tried not to use them too often.

Ah, the ones we had weren't due to any inherent limitation. They were do to someone failing to right-click desktop and change the setting :-(
 
@Cerberus we didn't either, but I think this was the approximate price converted.
Ours could, in theory, do more.
I right-clicked and changed the setting once.
When I had to sit at the same computer a week later, it was back to the bad setting, and changing was disabled from students' accoutns.
 
That is a lot of money!
I guess 15" was a lot back then?

But we couldn't afford more.
and hardware was relatively more expensive back then.
I paid 700 Eur for my current monitor
And I think of getting a second one like it
They are down to 600 Eur now.

Ok. I think we could start all three with the first paragraph. Then a second (new) paragraph like:
As I've progressed as a cook, I've gone through three distinct phases each well supported by a different book. I'll discuss each in it's own post. Today: NBR. Post 2: Ratio, Post 3: The Flavor Bible.
Then we could update the old posts with links as the new posts come out.
 
But it is better for the author that way - else, if I do happen to disagree, and mention it after he gets your version, it is confusing for him.

I changed the sizes by hand, and added padding.
If you work on them, remember to keep these parts - if you let it autogenerate them again, you will have to change them again by hand.

Oh, I would put them there.
It makes it easier to know how the post will look like when published.
They can work wonders to break up a long post nicely.
 
It slows LibreOffice down, I've noticed...
 
But of course, we don't have to bring them to pixel-perfection until the post is final.
@derobert I thnk that it is the online pics which slow it down
If they are embedded directly in the document, I think it works OK with them
Especially if they are embedded in their small form and not scaled real-time
 
That could be. I just noticed it when copy/paste from Wordpress (so I deleted them, and replaced with '[IMAGE]')
... and I guess I'm used to stuff where images are put in last, you don't really worry about them until final layout
 
But if we had shown Martha a version without images now, she wouldn't have noticed that we have the spinach images close to the non-spinach recipe (I knew about it, but didn't think that it would be a problem)
 
Sure, you put them in for the final draft, but not before.
@rumtscho E.g., I wouldn't worry about getting them into LibreOffice. Ideally, I think we'd get a draft (in say LibreOffice), pass it around, then send back our suggestions & comments. We'd receive something back from the author, and put it in Wordpress (with images, formatting, everything). Then let the author see that version, which should only have minor changes left to do.
@rumtscho well, good news, Martha isn't frustrated with us. Or at least won't admit to it :-P

I made two completely new versions.
I think they deserve a new post, especially seeing that it isn't easy to make a working version of these things.
I only thought them up after reading Martha's first draft.
There, I realized what the problems with her first ones were (although I didn't appreciate the size of the problem until I tasted mine - which I assumed will be reasonably tasteful - and found them lacking in amount of spice)
@derobert I will go and make Martha's latest suggested edits.

An art exhibit from a Dutch artist who took a stuffed cat and built a quadcopter inside of it.
It has electronics, cats, art, and Dutchmen. It should appeal to everyone here.

@rumtscho, @derobert, revision sent to the blog email. I accepted changes rather than putting another round of changes in to the doc. Which makes it a bit harder to see what I did. Sorry about that. I was half way through before I thought about it. By that point I just decide to continue as I had.

@rumtscho, yeah, while I hadn't been totally consistent, they were basically in that style already. I'd had one or two drinks when I was writing this (ok, 7 or 8)
