I suppose the main difference is the use of statistical inference. In a cold-boot attack (cooling the RAM and pulling it), there's no statistical inference -- you just read the key straight off. When measuring the voltage (a power analysis side-channel attack), you may have to take several measurements, or compare your measurements to a model of the system to make your inferences.
