serverside, if the data is generated seperate from the presentation, as @RoryAlsop said, then just having another action/filter/whatever is very painless.
But yeah, direct HTML -> Excel doesn't make sense imo. You have the data. Format it properly in a way that makes sense for Excel instead of doing a half-assed conversion.
many frameworks will do this for you automatically and transparently.
