@curiousdannii Of course, this is far from ideal situation, but I believe it's a realistic scenario. I would frame it as "a last resort" way of resolving competing obligation and competing interest instead of outright deception and manipulation. In mixed marriages, CCC and Canon Law clearly tasks a Catholic parent with bringing up children in the Catholic faith (which should be understandable to Protestant denominations too), and that the non-Catholic spouse should be notified and asked to agree before marriage.
Mechanisms are available such as dispensation and other arrangements agreed upon by both parties. At the minimum the non-Catholic party should agree to allow the Catholic spouse for free exercise of Catholicism even when the non-Catholic doesn't agree to bring up the kids in the Catholic faith.
This should have been a major consideration for the Catholic party not to go into a mixed marriage situation in the first place, but in a non-Christian majority country, this can be an issue. For example, I came across this paper addressing the issue in majority Buddhist Thailand.

@curiousdannii Of course actual situations are different, depending on how the non-Catholic feel about it if they find out later. But this needs to be balanced with the Catholic parent's side which is about the spiritual welfare of a minor, possibly of eternal consequence. If I were the non-Catholic spouse I am willing to see it as tenacity out of love, and I would simply ask the kid to be rebaptized in the Baptist church when he/she is old enough. No harm done.
