It's just clicking a link and putting in the details. Having as a subdomain means that there might be some fiddling with plugins in order to get the domain recognised - since officially atm I believe the only supported method is to have all blogs under one domain or in subdirectories, but there's plugins to enable the mapping of other domains to specific sites.

It's a bit more involved than simply pressing "create site" but I don't think it's too difficult.
The implied question between the lines there was "oh dear gawd how much of a headache and pain is this going to be for me with all of these sites" q:

The sites would need to be set up as a subdomain/subdirectory install somewhere (e.g blog.stackexchange.com/wordpress, wordpress.blog.stackexchange.com) but then blog.wordpress.stackexchange.com could be mapped onto it.
