I don't really know anything about Android internals, but Things On The Internet suggest you might be able to mount a normal file system from your phone with ADB. Might that work with normal recovery tools?

I have to say Android's built-in app restore feature is a looooot better now, to the point it's actually useful

It'll let you select which device to restore from, not necessarily the same one, as well as picking specific apps to restore or skip. And it restores some app data but still nowhere near all

Also if you have a custom launcher (e.g. nova launcher) it'll restore the launcher and set it as default before you finish the setup wizard (which takes a lot longer now for that reason) so you just go seamlessly into your custom launcher at the end of setup and don't even have to change from the Samsung one manually
