7:57 AM
I think I'm pingable while streaming :D

also
We reverse engineered a recipe for something called shio pan from a brazillian portugese youtube channel and a japanese webpage ;p

What's the filling?

there's no filling

morning all

you have butter inside and that melts, so there's a cavity and buttery goodness

8:10 AM
"good morning tall"
"how are you?"
"oh, fine thanks, you?"
"yes, not bad"

@ElendilTheTall how's it up in the stratosphere?

chilly

Hi Sweetie
@JourneymanGeek mmmm

I need to check the raising times with mom, and maybe stick it somewhere handy ;p

Nice

8:21 AM
(also, other than actual forming, pretty simple)

So, deep fried?

no
Baked

The base is fried? Sorry... I've been busting ass all day, and I've been up for well over 24 hours. I shouldn't be allowed near a keyboard right now.

basically its 280g flour, 180g warm milk, 5g salt, 15g sugar 3g active dry yeast, 5 grams butter for the dough. there's a primary raising (45 minutes?), we divide the dough into quarters, flatten, then into quarters again, stick some butter in there, roll it up, oven.
Butter essentially melts and makes it seemed fried ;p
lol

Gotcha

8:25 AM
No frying involved, except accidentally

faux frying

kinda sorta
the butter melts and soaks through the dough, and with a few it leaked through ;p

I got it :) The one on the right looks best from here.

XD
I think that's the actually japanese bakery
;p

@ElendilTheTall I can't stay up anymore! I'm toast! (buttered, baked and with Himalayan salt)
I may be up in a very few hours...
Until then...

8:32 AM
@Jolenealaska arrivonara

G'night!

night

You too @JourneymanGeek

mid afternoon to you. Go sleep ;p

4 hours later…
12:47 PM
I was asked to provide vegetarian meals for minor 1: They watched a film about how chicken are raised and slaughtered and eggs produced. So he wanted to try being vegetarian for a month. In the end, he agreed on a one week trial for a start.

a no-egg vegetarian?

Ovo-lacto.

the film wasn't gruesome enough :)

Hi @Stephie and @rumtscho! Sure has been quiet this morning.

It's about how animals are treated. He knows that I always buy organic eggs and often organic meat.

12:49 PM
I am scrambling to finish some loose ends here
I don't know, are organic egg hens treated humanely in Germany?

Hi @Cindy! I was out with hubby.
@rumtscho If I'm really lucky, I get them from our neighbour, there is a free-range farm nearby and organic standards are pretty high, IMHO.

@Stephie heh. As a lacto vegitarian.... its a pain in the rear finding stuff I know its 'ok' for me to eat sometimes... so good luck either way

@Stephie Should be interesting to see how he likes it.

Am looking forward to the experiment too.

I know organic standards are high when it comes to things like less antibiotica etc. But I don't know if they also address the hens' wellbeing as in floor space or access to sunlight.

12:54 PM
At least he's willing to go "vegetarial light" - so I don't have to worry about things like hidden gelatin in fruit juices etc. Just no explicit meat stuff.

@Stephie that probably is easier

@rumtscho yes, it does. And as rule if thumb there's always the stricter labels vs. EU Bio.

but gelatin is fruit juices is rarish. collagen on the other hand...
(also, allergy labels <3)

collagen in fruit juices?

Its a thing here.

12:55 PM
What for?

also, gelatin is melted collagen, so are you sure it is not just a language issue?

The gelatin is used for filtering - a bit like egg whites in stock.

ugh. I don't think they do it here
or I hope its labelled :(

after all, gelatin has a rather negative value in marketing ("did you know it's made from horse hooves") while collagen has a positive value ("cremes with collagen make you look young")
ah, "marine collagen peptides"
sounds like the fishing industry had some stuff to get rid of. Octopus beaks or similar.

12:57 PM
probably
or fish scale/bones etc

Skin and scales of fish. Just googled.

(We don't get stuff from that brand at all)

I wouldn't be too queasy to drink it. But I'm not a vegetarian.

@Stephie maybe this can be an occasion for your family to rediscover lentils. They are surprisingly underrepresented in German cooking, but they are a great meal, and a very convenient protein source for vegetarians.

1:05 PM
Linsen und Spätzle? Remember where I'm from....

OK, maybe my sample is too incomplete.
I didn't know it was a common food in your region.

@Stephie Sounds tasty!

Seriously, I love pulses, in almost every shape and form.
Linsen mit Spätzle (lentils with Swabian pasta), normally accompanied with wiener sausages, is a traditional Swabian dish that is by many Swabians considered the Swabian national meal in the south western region of Germany. == History == The dish originated - like many typically Swabian dishes - as a meal for the poor. While meat was too expensive for the major part of the Swabian population, lentils were a popular and nutritious staple food which could be stored during winter. Today this winter dish is on the menu of many traditional Swabian restaurants. Aside from that, it is a popular meal in...

But until now, every time I have seen a German encounter the idea of "lentils as food", the reaction was "Ah, yes, they are a good food. I wonder why I never make them, I should do it sometime."

1:07 PM
I do. In winter, typically once a week or so. And it's one of my freezer staples.

Have you guys ever added kielbasa to a spaghetti sauce? Delicious!

I'm not even sure what Americans understand under kielbasa
it is a Slavic word for "sausage" in general and for me it covers any kind of charcuterie which involves stuffing.

so "meat in a tube, sometimes identified" ?

Here kielbasa is also called polish sausage. We can get it fresh or cured.

Or, if you are buying from an ex communist factory, "please don't identify it for me"

1:12 PM
Some companies also label it as Polska kielbasa.

@rumtscho "Wenn rauskommt, was da reinkommt, kommt er wo rein, wo er nimmer rauskommt". Butchers' rule.

I happened to get to know the boss of our canteen.
Once he said, perfectly deadpan, "Fleisch in die Fleischklöße? das machen nur Anfänger".

LOL!

the problem is, he is a very stern man and I have never ever heard him joke or laugh at others' jokes...

Jay
Good morning ladies

1:16 PM
Hello @Jay!

Jay
Its a beautiful(sarcastic) muggy day on the 43rd floor of my building

@Jay Hello!

Jay
@Cindy hello cindy i just saw your ping

(the translation for the nongermans here is, roughly: meat in the meatballs? only a beginner would do it)
hi Jay! What do you mean, muggy?

Jay
1:17 PM
What kind of charger does your husband have?

But without meat, arn't meatballs just balls?

Jay
@rumtscho foggy and misty

better than "I got mugged today"

Jay
haha true true

@Jay It's an Anker 2nd Gen Astro E5. Brand new in the box.

Jay
1:23 PM
Hmmm I was specifically looking for a solar rechargeable external battery

Oh, didn't realize.

Jay
For when i eventually go on the 1 month long camping trip i planned in the future
that i have done 0% planning on atm lol
@Cindy Regardless I really really appreciate the offer though

I'm not sure these are as good as advertised
you will have to try it out
I've read some negative reviews, but the technology probably has improved since then

Jay
I've seen one or two decent priced ones so far that have pretty good review
but still looking around as i dont need it immediately

OK. What I meant is, "don't just buy the first one you see and assume it will work for your intended usage pattern". It is the kind of product for which you need to read reviews, try out if it is compatible, etc.

1:26 PM
@Jay No problem. From what I've read, this seems to be a pretty good one, but it definitely wouldn't do what you need. And you can't beat the price! ;)

I have an external battery, not solar chargable. The Sony ereader cannot charge off it for example, and I only noticed it when there were no outlets available.
it works fine with my phone though. So, I'm not trying to tell you not to buy, just to be prepared to invest some time in getting it to work the way you like.

Jay
@Cindy Btw do you have a start date for your new job yet?

@Jay Nope. Depends on how long the onboarding takes. Background check, identity verification, I-9 verification, etc. Shouldn't be too long though. I was able to complete most of the forms and policy reading yesterday.

Jay
Yay! I love this "free time" between job acceptance and not starting work yet
Its like a earned free time and you dont have to feel guilty about not doing anything yet :P

@Jay only when you are not frantically trying to finish something else in the meantime :(

Jay
1:32 PM
Have you gotten the drug test out of the way yet?

Wait, you get a background check, identity verification and a drug test when you start a job?

Jay
Woah!
I'm getting weird flags
is that a 10k rep priviledge?

and this is in the country where people refuse to get a government issued ID out of the fear of too much intrusion in their personal affairs?
I have never had to take a drug test in my life

@Jay No, waiting for instructions on that.

"identity check" was me bringing an ID to the contract signing

Jay
1:34 PM
When something important is on the line, most americans will put anything on display for its sake

@rumtscho Crazy, right?

and some jobs require a confirmation issued by the municipality that I have not been found guilty of crimes in the past, but not all.

Jay
@Cindy Dont forget to check your email regularly. I almost missed my drug test deadline because i got too lax and didnt see my 48 hour drug test email until the second day

@Jay Well, we really don't have much say in the matter.

for ones which require it, it is a standard and very quick procedure to get the thing.
Cindy, will you be properly employed or a "contractor"?

1:38 PM
@Jay I'm checking regularly. Also waiting on the I-9. I mean, I've been an I-9 verifier in all management positions, so I know what to do. Just trying to follow their protocol.
@rumtscho I will be a direct employee, not an IC.

Jay
@Cindy Yay!

@Cindy Now that sounds like a win!

@rumtscho Works for me! :)

@rumtscho did you see this poster? cooking.stackexchange.com/users/47705/jeff-randa

ooh troll
and not one of the funny ones

1:46 PM
deleted

Thanks. I react badly to "Jeff"s - had a special troll at Parenting...

Darn - I missed it.

The troll?

Jay
Time to delete @Jefromi also
:D jk

@Stephie Yeah. See what happens when you step away for just a sec?

1:52 PM
If @Jefromi starts trolling, I'll personally fly over to check on them.

Jay
I have a date later this evening at a place called Double Knot. My date chose the place.
Google describes it as "Charming coffee shop with a secret izakaya in the basement offering sushi & robatayaki meats."
Sounds really neat :D

Like "I couldn't decide..." ;-)
Oh, how can I link to a youtube video at a certain time? Does anyone know?

Jay
Between just grabbing coffee or getting dinner?

Between "I want to run a coffee shop" and "lets open a sushi place".

Jay
Oh haha, i dont know if its run by the same people
its completely likely due to the high property prices that they are completely different shops
oh wait nvm, theres only one name
im dumb, ignore me
puts on dunce cap

2:02 PM
The Double in Double Knot being a hint?

Jay
ohh haha
I'm just excited to go, I'm not thinking too hard about it :P
Although I think dinner first, then coffee afterward will be the way we do it

I'm happy for you!
I'll be going out tonight, too.

Jay
OHH!!!
Dinner date with hubby?

But way more boring - final PTA meeting.
Nope, we had a coffee date this morning!

Jay
Where its all Single Attractive Fathers

2:04 PM
Females only, this year.

Jay
Damn, way to ruin my mental images
haha

<shrugs>

Jay
In my mind single fathers are not off limits
If they are interested in me haha

"Single" being the keyword? And why not...

Jay
Hmm interesting, i still didn't get my 1 year anniversary bonus yet
I think its time to email HR about it

2:10 PM
Wouldn't that come with your paycheck? Like at the end of the month?

user208178
@Stephie It is kind of easy. Let me paste the screen shot

user208178
Just use this below any Youtube video:

user208178

user208178
And hi all.

Thanks - have to try another browser, it seems.

Jay
2:14 PM
@Stephie My anniversary was June 22nd. My last paycheck was June 23rd. I assume if it was paid along with my paycheck it would be on that one. And in the past my bonuses were paid separate from my paycheck

And if they do it once a month?

Jay
Perhaps, but it doesnt hurt to double check with my HR contact

A dog linked me to this room and suddenly I am here... O_O

@allquixotic a three-headed one?
Welcome!

in Root Access, 6 mins ago, by Journeyman Geek
in The Frying Pan, 1 hour ago, by Journeyman Geek
so "meat in a tube, sometimes identified" ?

2:21 PM
Oh, that one!
lol

user208178
see you guys later.

See you, @VitaminC!
So are you a cook, @allquixotic?

@Stephie naw, the one with the more conformist number of heads ;p

2:43 PM
@Stephie I occasionally put things in the microwave, and once or twice a year I might assist a family member in preparing something more exotic, possibly something involving flour and kneading
generally my culinary preparations involve getting plates, pouring drinks and then cleaning up after... other times I simply ask someone to subtract a number from some database somewhere (in a so-called "bank"?) and in return they serve me a bunch of food so I don't starve and die. that's nice.

@allquixotic better than nothing, I guess?

I'm still not sure what that whole thing is about... like, why would someone go through all that trouble to make me all that food just so they can do subtraction in some number database? silly silly

Well, they can ask the database responsible to increase their number and get other goods (possibly even real ones) by decreasing it again....

O_O
so they also do addition, and then more subtraction and someone else is happy to do things for them in exchange for that subtraction?
weird... why can't I just do multiplication by like 99999999 and make everyone do everything for me, then?

Silly, but beats bartering a pair of worn shoes for a meal and lugging bags of rare metal or crystal stones.

2:49 PM
huh, true... besides, if that were the case, I'd be hard-pressed to get anyone to do anything for me, because I get paid in peanuts :-) and nobody wants peanuts

(Did I just defend the banking system? Silly me...)

I'd have to barter with a place that buys peanuts, like a peanut butter factory :D

Which might be not conveniently near. So you'd have to hire someone to trasport them to the factory, again for a share of said peanuts.
At least this service provider could exchange his peanuts for some jars, bringing the majority back to you. Again for a share in your jars.
Hope they don't trip.

Plastic jars don't break when they drop :)

They splinter.
Or crack.

2:53 PM
depends on the distance; I've dropped a full, closed jar of peanut butter from around waist height and it didn't do any of the above
speaking of... I am expert hors d'oeuvres (misspelled horribly, I'm sure) creator

Ah! Like?

that's the one culinary tradition I consider untouchable and required

Because it goes with booze?

actually my taste has evolved over the years but I have a sweet spot for all of the different ones I've made before

Or because of the nice French name?

2:54 PM
when I was younger I would use Ritz crackers with cracker barrel extra sharp cheese and either bread and butter pickles, or manzanilla olives

Good start. What have your skills evolved into?

then I moved on to Carr's water crackers with Sonoma sharp cheddar and bread and butter pickles from the local farmer's market, which are to die for
but I'm not done yet! :D

Ah, ingredient upgrade.

my latest iteration? Carr's crackers still, with either sonoma cheese or a locally produced, grass fed cow organically grown, havarti or extra sharp cheddar, with quince paste -- membrillo de casero
it's fun to slice it up, because it's like an extremely thick jelly
it's a lot softer than cheddar cheese but it holds together well, it's very "gel"-y
or jelly. ha ha.

You should try guava paste with cheese too.

2:57 PM
I like to challenge myself to use as little cheese and quince paste per cracker as possible, while still retaining that flavor

Yup, the quincessential jelly.

so if I'm having a plate of crackers, I might put a large helping of cheese and quince paste on one or two crackers, the rest going very light
the difference in "intensity" between them makes it all the sweeter when I eat the big one :D
lol. quincessential

@Stephie thanks for not letting them delete me, and also you can right click on YouTube videos and there's a choice to copy the URL at the current time.

@allquixotic i once dropped a small jar of nutella on a plate. Plate broke.
I do do a little more cooking than that tho ;p

3:02 PM
@JourneymanGeek sounds about right!

(at the very least cheese toast, pasta that's not overcooked...)
also, I apparently have a thing for kneading bread. Bread tends to raise more when I do it. Magic paws or something.

overcooked pasta is the worst
I prefer very al dente pasta
"to the tooth". I always love that expression, it makes me laugh

My parents tend to overcook it. then cook it some more.
and they think its right.

what?!
so they overcook it first, then over-overcook it?!

yup ;p

3:05 PM
that's........ NO. JUST NO.

I tend to undercook mine, then let the residual heat nearly finish it, and finish it in the sauce
and undercook to me is 'just enough that there's no starchy core'
yeah. The savages.

my favorite thing is Mac n' Cheese with the macaroni extremely chewy. not hard or crunchy, but chewy

There is al dente and al dentiste - meaning you should really cook it a bit longer. ^_^

I tend to do penne + tomato chunks + lots of garlic.

3:07 PM
@Stephie what's al dentiste? is that a joke? :P

Sure!

taking it out of the box raw and immediately eating it hard would be al dentiste to the extreme, then, as the amount of chewing you'd have to do would send you to the dentist with a cracked filling ;p

Got me.

(I think @allquixotic has seen this ;p)

3:12 PM
lol, yeah, love that video

8 hours later…
10:57 PM
@Jefromi @rumtscho @Jolenealaska any of you all here? There's a slightly overeager answerer who doesn't appear to actually be reading any of the questions he's answered... and at least two of the answers tell people to add peanut butter (one to reduce saltiness, one to get rid of burnt flavor).... it makes very little sense.

OK, thanks. I'll take a look.

11:19 PM
@Catija Already looking after seeing the steel-cut oats one, thanks!
@Jolenealaska FYI I already asked him a couple times to edit (and Catija has too). Hopefully he'll notice that before posting too much more :)
@Catija I think he just likes peanut butter :)

@Jefromi Well, I do, too... but I don't consider it a cure-all :P

I dunno, my complexion has gotten a lot better since I started my peanut butter face mask regimen.

user208178
11:44 PM
@Jolenealaska what are you streaming?

user208178
@ElendilTheTall what's "arrivonara"?

@Arrowfar GoT So, you're Arrowfar again? Don't screw it up.

user208178
Screw up how? I'm clueless.

user208178
@Jolenealaska I see, nice.

@Arrowfar No you're not.

user208178
11:46 PM
you. are. intelligent.

user208178
yes i know.

@Arrowfar So I have been told

user208178
:)

back to GoT :)

user208178
so I couldn't change my name but I asked around and a good person helped me.

user208178
11:48 PM
Have fun!

user208178
@ArtOfCode Hi! did you come here because of me? if that's the case then I need to know why?

@Arrowfar I don't think you really need to know why any user is in this room...

Why ever would I have done that?

user208178
@Jefromi I was just asking him. You don't need to be terse with me Jef. If you don't want me around then just say so.

user208178
I never like your attititude.

user208178
11:53 PM
Be Nice yourself.

...wat

I didn't say I don't want you here, I'd just rather folks who enter the chat room for the site I moderate not to immediately get a "why are you here?" response.

It's not very welcoming.

I haven't asked you why you're here either :)

I hardly think Jefromi's message wasn't Nice...
