While "we're jumping off the Empire State Building" is grammatical, I'm not sure of its semantic validity (as a present continuous action). You've either jumped off, or are about to jump off. I'm not sure at what poit you can be said to be "jumping off". Maybe when your feet are in the air, but still above the building?
