@stuffe Activity is an odd thing. We're not drowning in flags and moderator actions, so having two more people might help balance things if their sleep/wake cycles differ from the US coverage we have presently.
Also - the value of a moderator team is in bouncing ideas and someone who is less active sees and handles things differently than someone that has handled 100s of spam flags or more janitorial clean up. It's nice to be able to ping someone or leave a note asking another moderator to have a look and then come up with a plan together.
Each moderator is of course after a short period, pretty much able to handle most things on their own, but as @Shog9 mentioned earlier, the art of moderation seems to be a mix of collaboration and knowing when to act in many cases.
The system has many great tools to flag things, but experience takes those signals and decides what to watch, what to comment/nudge/encourage/support and what to shut down and clean up immediately.
