Taking your dog out of the UK is not a problem, you need a pet passport and some jabs, as well as a chip under its skin. Getting the dog back home is a bit harder as it needs rabies jabs and those take more time somehow.

It mentions a rabies vaccination for travel both ways, I am sure the UK is harder to get into than most of Europe.

You need to get her a collar!
Before returning to the UK, a dog must have a tapeworm treatment between 24 hours and 120 hours (one to five days) prior to your scheduled arrival time at home.
 
In most countries you need to keep your dog on a lead, collar is most common for that. If you use something else to keep her on a lead, you may use that instead of collar

Most people do not bother taking a dog for a short travel, also as it is often no fun for the dog to travel. But some love it.
As long as you leave the harness on when not on a lead, that is OK.

she worries all day and it's not enjoyable
 
She has not had to leave the little one often enough to have gotten used to it. I hope the dog loves traveling.
 
Once we left the cat with a breeder and had to return early
 
Not sure whether that is helpful, but I think it is fun to see it is available.
We used to bring our dog to the pet rescue center where they would take care of it for the duration. Dog was always well behaved when we returned (for a day or two)

Yes, the hotel must accept pets - no question about it
 
Do you plan to fly or go by car? (Train is not possible, with dog, as far as I know due to rules in France)

And maybe even car rentals.
 
It is very complex
 
Once you know the rules and have the pet passport, it is no harder than a pet health check twice, (once before going out and maybe one there.)
