Could someone please help with the correct English term for thinly slicing something (e.g. what you do to cabbage to get cole slaw)? Russian term is "шинковать", I'm guessing "slice" but I suspect there's a more specialized technical term
 
@DVK-on-Ahch-To I don't think we have one, really... I don't think "chiffonade" applies here... or "julienne"...
All of the recipes I see just say "thin slices".

Finely cut could be in cubes...

I'm trying to make a Q on the main site on how to best/easiest shred cabbage for home made sauerkraut/cole slaw for someone who doesn't have good cutting technique, but not sure of terminology
 
I'd probably use the shredding/slicing attachments on my Cuisinart.
 
@Catija Hm. If you only ever tried Western type; try russian style cole slaw. It's quite different and way way superior (imho) to either US or German style stuff

I'm not really food critic material :)))) Having said that, it's truly crunchy; the taste is far less femented; the color's different (well that's probably because it usually has carrots)
I'd say it's a bit closer to Kimchi
 
... What western coleslaw are you eating that's fermented?
It's just a salad made out of cabbage that has either a creamy dressing or vinegar dressing...

Kimchi is fermented... so is sauerkraut.

The wikipedia page for coleslaw says it can be pickled but I don't know that I've ever (knowingly) consumed pickled coleslaw.
